Blueberry Marshmallows recipe - a fluffy, sweet, and sour treat

    Ever since I made marshmallows for the very first time (S’mores bar!), I’ve been interested in making a flavored marshmallow. Should I make peppermint? Honey? I decided on blueberry! But with a twist. I love sour candies and so I also added some citric acid to add a nice tart flavor. But marshmallows are a lot of work… and the cleaning… haha.
    I referenced NYT Cooking’s marshmallows recipe and made adjustments to it.
    13”x18” baking sheet
    Ingredients:
    Blueberry Syrup
    2 cups (~300 grams) blueberries
    4 tablespoons water
    1/4 cup (50 grams) sugar
    2 pinches salt
    Squeeze of half a lemon
    Marshmallows
    Blueberry syrup
    4 tablespoons + 3 teaspoons (6 envelopes) gelatin
    604 grams (3 cups) sugar
    2 cups light corn syrup
    1 cup water
    1/2 teaspoon salt
    1 tablespoon blueberry emulsion, optional
    Sugar Coating
    1 cup freeze-dried blueberries
    1 cup powdered sugar
    2 teaspoons citric acid, optional

    I dont comment much but your channel is absolutely wonderful! I love all the recipes and will definitely be trying to make some of them myself (especially the earl grey pie one thats my favorite tea) also the beautiful illustrations on your thumbnails and channel are such a treat to see! keep doing what your doing! :D

    Can Rice Syrup be substituted for Corn Syrup? Looks delicious! 😋

      Im not sure. Ive only used rice syrup once so I dont have much experience with it! Haha sorry!!

    I wish I could cook or bake and leave food to do its thing uncovered, but the ants keep coming. How do you deal with ants, etc? We spray the insecticide outside the house and clean our home, kitchen especially… 😰

      Borax and honey mixed together in water, then soak cotton balls in the borax solution, then place on dish for ants to consume. The borax is poison is for ants and they will consume the liquid, bring it back to their colonies, and other ants will die consequently.

      Try putting a cup/bowl upside down on top of another plate filled with water and put your container/plate/pan/bowl of food on it so there’s a border of water to prevent ants

      And cover the entire thing with those foldable food cover nets that are really fine to prevent other insects, it should look similar to a tent.

      I made this during winter when I dont have to worry about fruit flies and I dont have issues with ants in my house. Perhaps you can place the baking tray on something elevated that the ants cant crawl on?
