I was gifted some organic apricots (3 1/2#) so I pitted them and quartered them and stuffed 'em in the freezer. When the farmers market has them in stock, I will buy another 3 to 5 pounds and make apricot jam and apricots in syrup. Maybe some apricot brandy. You, my dear, are an inspiration. Thanks for reinvigorating my love for canning.
We will have pears in a couple of months, but it will be a couple of years before our small nectarine trees produce. But we will be trying some combo fruits. Thanks, Linda
I really enjoy your vids, and part of the reason is that you have a way of making us feel we are in your kitchen canning together. Please don't change your style. I know there are a few viewers commenting that they wish you'd get to the point, but IMHO they are the ones who are completely missing the point. They remind me of the type of person who asks for a recipe, then criticizes it, when what happened was they left out or substituted half the ingredients and didn't follow the preparation instructions!
Oh that looks delicious! It really makes a special dessert when you use your own home canned fruit. This blend is so good. I love using Nectarines in place of peaches too. So much easier because you don't have to get the skins off. Saves time too. Thanks for sharing.
Linda, you have inspired me. and I can, following along with you, thanks for being such an awesome teacher, and encouraging us to dig deep and become self reliant in todays economy, we garden, have chickens, fresh eggs everyday, we have started composting, and I can our bounty. again thanks for taking the time to teach, love the canned chicken, salsa, goning to be making pork-n-beans to put in my extended pantry when my All American canner 921 comes in this week so excited for it's arrival...blessings to you and yours...

Great video, Linda. I'm terrible about tipping my jars after a very bad burn. :( BTW, my daughter came over today to learn how to make fried green tomato appetizers. She said, mom pick me for a winner so I can get that spatula. I said, nope. Linda from Linda's pantry is picking. She said, wait, you follow Linda. I've been following her for a long time now. Small world even in my own house. lol
Those look amazing! Thank you for the videos - they are a lot of work. It's strawberry season here in Virginia, so I went to a pick your own patch on Saturday and picked 12 quarts. Brought them home and made jam and syrup...then put the remainder in the freezer for winter. :)

I use to water bath and never made huge batches like you have. I enjoy small batch canning. Hubby is not a jam person however. Only huge batch we do is pickles. Hope you do one for small batch when there is time.

Hi Linda, Love the idea of mixing of the Pear and Nectarines to canning, My question is after they are soaked in the Water w the powder to keep them from turning brown do you drain that water off and add fruit to the Pot to cook then add the White Grape Juice? Thank you, Ginny
Linda I am canning these tomorrow. With this much volume, do you go ahead and prepare the other jars while the first load is processing? I thought that might be what's in the red pot. Or, are they are empty jars in warm water waiting to be filled? Also I get concerned that the fruit that is hanging out in the water they were warmed in might get too soft while you are waiting for the first load to complete processing.

Linda, you've definitely have given me the canning "bug" - I canned pineapple jam (recipe from Noreen's Kitchen) and I also made your caramelized onion jam. The onion jam is unbelievably delicious! I had to really hold back from eating the whole jar!

I did plant a small space but only have green beans and three sweet potatoes so far I planted seeds. I had my grandmother seed and she planted till she was 91 and she has since passed. I would love to see you do more water bath. I have never used a real pressure cooker. I would love one of the new pressure cookers the power pressure xl I believe have you used one and what is your thoughts if so? And I would love to see puppies we have had a bunch but no longer have puppies. TFS so enjoy it is relaxing.. Blessings Linda..
