      Sorry if I’m commenting in the wrong location, but in my Chicago suburb, (Saint Charles), fresh produce is not flying off the shelves as fast as other stuff, exactly as you have observed. I’ve been monitoring Costco, Walmart, Jewel Oslo, Meijer and other smaller grocery stores every other day for a 3 weeks. It’s the same r all of them. Keep up the good work!

    This is just brilliant! I definitely needed this reminder! Of course I wasn't thinking about greens! I had most of my other bases covered, but you are so right! It's the greens that is going to be super important and ends up being relatively cheap! I LOVE your grow room and look forward to more videos (a tour!!!) about it.

    I totally agree. Thanks for sharing x. To anyone stockpiling - you DO know that if you stockpile cleaning products leaving nothing for others... you do realise that to stop covid19 you need other people to wash their hands too! - A dehydrator is next on my list :)

    I keep dehydrated kale, spinach, book choy, leek, cauliflower, zucchini, etc. in the pantry, always. I live too far from town to go for fresh greens often, so when my garden is in "down time" (long winters here too), I use the dried stuff.

      Milk Money. I’m new at dehydrating, do you do the greens in the house? I did pea’s in the house and never again lol, I’ll do those outside if I can. They smell the whole house bad. Any information would help, thanks in advance:)

    Love your sprout ideas! My last batch of dehydrated greens blend included kale, raddiceo, turnip greens, beet greens, Swiss Chard, borage, strawberry leaf, carrot leaf, nettle, calendula flower, kale, and dandelion leaf. Each year I blend together every nutritional leaf I grow. What a power house!!

    I love to dehydrate my greens! I like to add it to soup too. I’ve not frozen kale before but I’m going to try it this year.
    I agree with you about eating greens and mental health - SO important!!

    In my opinion, you are exactly right-greens are important for health. Also, in my opinion, most people who are loading up on toilet paper either (1) don’t know what else to do, or (2) are planning on batteries or reselling those items. Kinda sad either way.     Thank you for this! My first reaction after washing hands often was to pump up our veggie intake. We eat a lot of them as a rule but my gut feeling was get more greens in. So we have been. However you have really given me a ton of more green thing ideas! I am super excited about this. I also truly believe as you do pump up our immunity especially right now. That is critical :) hugs

    Thank you for this very thoughtful, practical video. I think it's important to note that there are people who may need to consider alternatives to your choices. Some may not be able to eat those dark greens (or their derivatives) or take supplements, and therefore their storage requirements will be different. That said, your core message about [calm] preparedness is spot on. Understanding what is really essential in one's own household is a great place to start.

    Thanks for sharing. Good points. I also sprout wheat and barley for my chickens so they get some fresh greens occasionally over the winter as well. For several years I have frozen blanched greens packed into large 1/2 cup ice cube trays. When frozen you can pop them out and put them into freezer bags. I find it very efficient to store lots of greens in my freezer.

    Good discussion When I did my shopping on Friday my cart had Kombucha, sauerkraut, kimchi and a spicy honey along with greens. I too look to nutrition as medicine.

      Ive just googled a bunch of stuff on dehydrating foods, it will be exciting to try these ideas. We are so far from town ,as you know, freezer and canning have there limits, this is great stuff

    Capsules with greens powder inside are easy to make with a supply of empty capsules and a $10 capsule filling tray/tool. Something to consider for those who dehydrate their own stuff, as store bought greens supplements can be costly. Other supplements can be made from home dried powders too - rose hip, elderflower or elderberry powder is good for immune support, or example. You can find supplement recipes online. Rain Country here on RUclips has many of them.

    Haha! We were talking about that at breakfast this morning; why stock up on toilet paper if you don't have enough food? We love ordering from Organic Matters, they have wonderful, high quality products. Last summer we, just like you, froze lots of greens and also dehydrated many beet and carrot greens, Swiss chard and kale leaves and zucchini and have been having fun finding creative ways to put them in our food. We even sneak them into our pies! They're also quite good on popcorn and in hummus. We have some sprouting seeds that we should get to work at sprouting - thanks for the inspiration!

    Great video, we need to be ready and be wise. I agree dehydrated greens are so handy, I dry kale, chard, beet tops, spinach and add moranga powder to the blend. We use it in our kefir smoothies in the morning or when I juice. God bless you and your family 💞🙏👼💖

    I would also add first aid to your preps. I say this because someone is always cutting or burning a finger. Having first aid cream, neosporin, alcohol, peroxide, bandaid, and butterfly stitches always come in handy.

    We always plant extra greens to dehydrate. I also forage for plantain and dandelion to add to the mix.

    ​Chelsea: For years I've been buying a little extra food, cleaning and paper products. I now have a full pantry: dried fruit, grains, rice, pasta, flour, Beans and lentils ( canned and dry), tinned condensed milk, meat, vegetables and fish; also sauces, pickles, condiments (bought when on sale) etc. Candy ( bought on sale after holidays), corn and potato chips in the large bags on rotation. Of couse popping corn.
    Plus a full freezer with seafood, ham, turkey, pork and beef, frozen vegetables, frozen fruit, bread, pastry dough, etc. And cooked meals in 1/2 liter reused cream cheese containers; (soups, chilli, stews, pasta and rice dishes etc.) ​First use and every day rotation frozen foods are in the refrigerators.
    As well in 2 fridges dairy, cheese, cooked meats, smoked sausages, left overs ( not suitable for freezing week 1 I tend to cook 3-4 portions) and fresh vegetables on rotation. My full meal salad will keep under the marinade for 3 weeks. (6-8 salted pressed vegetables , pasta, 5 bean salad, mushrooms , ham (or other cooked meat), cubes of old cheddar, diced apple, diced sweet pickles, etc.) A batch of 6-8 liters usually. The salty juice from the pressed vegetables I use to cook rice in.
    Plus baking supplies; nuts, cocoa, chocolate chips, coconut, various sugars, gee, oils, etc. And to keep it interesting 100 herbs, spices, dried peppers, flavoured salts, seasoning mixes, and curries. Enough food for one for a year so I could share. The first 2 weeks would eat the left overs and the food that would spoil even with refrigeration. My normal rotation.
    Fuel for the generator if I lose power to run it 4 hours a day for 2 months that I rotate in the jeep. I need power for refrigeration, lights and the gas furnace ( that also can be powered from batteries and an inverter). Charged when the generator is running.

    I have grow lights and I grow spinach and kale right in kitchen!!!! I also have two aero gardens filled with herbs and tomatoes!!! I sprout mung beans and alfalfa sprouts right now and I dehydrate my greens all summer and add to food through winter.

    Great pantry ideas Chelsea. Also dried elderberries or frozen for making syrup and dried or frozen spices for making fire cider (fresh is best for the cider but in a pinch use dried or frozen). Both will boost your immune systems.😊😁

    Once again, thanks for sharing. Here in Australia our shelves are bare too with toilet paper and hygiene products sold out yet fruit and vegetables in abundance. We are trying to prepare but it can be overwhelming and daunting too. Especially when the panic and fear is so great and hard to get everything you need as you don't have enough money to do it all in one go. Feels like the clock is ticking and running out of time. It's just crazy! But thanks for sharing tips :D

    Great video Chelsea. I just went this morning and bought more vitamins, they sure to impact my mental health! I'm in Northern ON and our stores are holding up ok still. Thanks for telling us about dehydrating kale, we grow a lot of it but it didn't even dawn on me to dehydrate! Best wishes.

    Back in the 70's we sprouted in jars with old clean nylon and ring it worked great since then I found two sprouters from yard sales that you water the top tray and it waters the rest and goes into bottom which you just empty and on the sprouts my very fav is alfalfa and radish seeds together on the trays I store them separate and just put some of each on the trays given that be sure you are using sprout seeds like she showed don't use garden seeds they are treated...our favorite way of having them is on homemade chicken salad sandwiches on homemade bread yum the thing I also do is dry spinach and have in jar like your kale.     Great video Chelsea! Mum's is a great family owned company with superior product! They are super nice people too! I have been canning my kale and swiss chard for last few years! Love it that way. I have been thinking of starting a small vegetable grow room as well. Canning potatoes and carrots from 2019 garden as they are starting to sprout an go soft...never done before, but they look great! Will be nice to have.

    I agree! While our family doesn't take many supplements (we mostly rely on good nutrition for our vit's and min's)...I DO absolutely think it's smart to keep some on hand in case of an emergency that might involve a food shortage or illness. Another way to get some cheap/free greens powder is to "prune" (carefully--not too many) your pumpkin and squash leaves in summer, dehydrate/dry, and crumble/powder to use as a greens powder. I also think, along with any synthetic meds that are needed for your family, it's good to have a GOOD working knowledge of herbal medicine, natural remedies, and nutrition in case of emergency (or, if you're like us, for every day). I am a clinical herbalist and I keep a 'go bag' ready with the first aid things I feel would be important in case of emergency--including herbal remedies, a stethoscope and BP cuff, old-fashioned thermometer (no batteries, etc. required), a pair of magnifying glasses (just your run of the mill Dollar Store 1.25 strength) in case someone needs to read that thermometer who doesn't have great eyesight (those numbers and lines are tiny! ) . I feel like you do....fear mongering is horrible....but preparedness instills a sense of safety and peace. God bless!

      I’m just at the cusp of learning about herbal remedies. I planted herbal perennials last year in anticipation of learning about how to actually use them. There are so many learning curves on the journey to being more self sufficient it can get a bit overwhelming at times. Thank you for sharing your thoughts.

      @@LittleMountainRanch I'm cheering you on from my little spot in the world! Traditional/holistic medicine is so important and much healthier in some instances, depending on the problem/illness. I am grateful for allopathic medicine--my son works in diagnostic medicine-- and it saves many lives....BUT, in my opinion, it is reached for too early and too often in many cases of run-of-the-mill illnesses. God gave us what we need to care for ourselves....our body is made to heal and will do so when given the correct conditions. Yes, there are emergencies and illnesses that either go undetected, are ignored, or get out of hand...and those are great times for the Big Guns of synthetic medicine, but a good knowledge of holistic medicine and some basic first aid is priceless. God bless you as you continue to learn! You'll have many remedies at the ready just by growing such things as cayenne pepper, oregano, sage, thyme, peppermint, comfrey, etc. Also, you're up in chaga country, right? I would not be without a stock of it. We keep a crock pot of chaga tea (drinks more like coffee, in my opinion) going all winter long. It's a wonderful immune booster, adaptogen, and cancer-fighter.     Nice video. I also dont like all the hype that many YT vids are shouting about. My cousin lives in Olympia, the capital of Washington State. He is freaked out cuz he went to Costco and the TP shelf was completely empty. Yeah! Costco. Land of mega tp tonnage. Anyways meanwhile my local grocery had plenty. With the fear mongering I could have cleaned them out. Buuuut... Good thing I already had most of my stock full so I just grabbed another pack. Love your thoughts on sprouting too. I get the lentils from the grocery store and sprout those. So good. Lots of good sprouting seeds from Bobs Red Mill. Love wheat berry too. Sometimes I sprout a jar and eat half... continue sprouting rest. Then again take out half and put in a grow tray. Grow them into wheat grass size. Eat half of that. Dehydrate and powder the rest. Such a wonderful wheat flour... OMG. My indoor farm is converted to hydroponic now. Its so much cleaner easier and grows so much faster than in dirt. Have you tried regrowing? So much fun. Everyone is so way into it when they come and look at mine. Its impressive how much food we can really grow this way. My next adventure has me looking at fogponics. I dabbled a bit and yes it works.     Also very important when the emergency involves a contagious virus, please wash your hands and stop touching your mouth nose and eyes. And keep your hands to yourself. (This is a hard one for me I'm a hugger.) Its how germs are spread.

    I love the idea of drying and grinding up the kale! I'm trying the Scarlett Kale this season!! Yes preparing for anything helps with mental fears of the unknown. I have heard on the news in Canada there is starting to be shortages on meds and toilet paper specifically. Love that seeds are up and started, mine are going now and it feels so good to see everything sprouting 😄🌱🌱🌱🌱 Luv from Ashes xo Ontario Canada

    So appreciate this video. So many I subscribe to on RUclips just keep on going as if all this hasn't even reached their ears... it's quite odd. Not that I'm hooked into the main stream hype of it, but it should, if nothing else, make one pause when a whole country shuts down for a month or more. The virus itself isn't super "new" in retrospect these have been around for a long time... but the economic/ function of life effects to a very serious health threat is far more deadly. IE: lack of preparation and calm thinking in advanced. Thank you soooo much! Agreed with all you said and as always so appreciate your perspective and wisdom! Smiles and blessings...

    Great advise, I would love to see how you prepare your frozen kale. I’ve done it in the past, but it is such a long process; harvesting, cleaning, cutting, blanching, getting the water out, then eventually freezing... Maybe your way is easier, or more efficient than mine. I always start with my counters full only to end up with one bag to freeze since it shrinks so much...
    anyways thanks for taking care of use in these uncertain times.

    So good! We have greens growing in flower boxes inside on window seats. They’re doing wonderfully! Our normal last frost date isn’t until may I think, so I’m trying not to jump the gun with all this warmer weather we have been having and plant things outside. It is tempting though!
    Would your greenhouse be able to grow any greens in the later winter months for you?

    I love your videos but want to encourage you to add a lot more lights to your grow room. I use 3 fixtures (6 total bulbs) per 24”x48” shelf. Also make sure to keep the lights as close to the plants as possible. The intensity of light falls off with distance according to a simple mathematical law: The Inverse-square law. Its very important for folks who are trying to grow plants indoors to understand this! What it means simply is that the intensity of light falls off inversely proportional to the square of the distance from the object it's illuminating.
    So, for example, if your light is 1 inch from the plant and you move it to 2 inches, you doubled the distance but now the light is only 25% as bright! (NOT HALF AS BRIGHT) If you double the distance again, your light is still only 4 inches from the plant, but the amount of light the plant receives is only 6% of what it was!
    So you can imagine how important it is to have your light right on top of your plants if possible. When they are a foot off your plant you would have to have very bright metal halides or similar to do much good at all.

    Food storage is important. We don’t know how this virus is going to affect us, but if it turns into something serious, I know I will be in big trouble on many fronts. I need at least 12 more months to get to a point were I can weather any disruption as long as it’s not freezing outside.
    Interesting times indeed.

      Little Mountain Ranch I’m in NYC to be exact and I drive a taxi (Uber) here.
      Some cases in and around the city. Of course disinfectants and hand sanitizers are sold out for days already. But you have to remember that we are in a on-demand society, neither people, stores, warehouses or manufacturers are prepared for increased demand. So empty shelves are to be expected.
      Last night was busy, people are going out getting their party fix. I expect increased demand next week because more people may avoid bus/train service. But as more companies offer work from home options, those who can afford a taxi will drop off quickly.
      People are concerned and unsure what to do. Listening to the news daily will certainly drive you crazy.
      Things can change relatively quickly now so every day can be worse. And it will be worse.
      For me personally, I may be affected in two ways.
      1) with reduced demand for transportation my revenues can drop sharply. Meeting high weekly car payments will be my biggest challenge plus making sure other debt obligations are met. It’s all about cash in hand.
      If there is some form of mandated travel restriction I run the risk of loosing my car within a month time.
      Which brings us to 2) I’m currently homeless living in my car. So it’s workplace and shelter in one. I can not afford to loose it. My lease is up in December, after that that aspect will be safe. In the mean time, besides the risk of reduced income, I depend on public services like my local gym (showers) and fast-food outlets (bathroom, food) to keep myself maintained. If they close, my day to day life will be challenging.
      And no, I do not have friends or family in this area.
      Why will I do better in 12 month time? #1 I’ll own my car and won’t have to fear missing weekly payments. #2 most of my debts will be paid off reducing the monthly burden of obligations. #3 I do own a camper. It’s sitting snowed in in northern Maine (last debt to be paid off hopefully next year). But I do not have power, water or heat. Well, I will have water and some power by next year. Heat is secondary between May and September.
      The longer this virus lasts, the longer it will take me to get setup and out of debt.
      Anyway, that’s my story.

    I have never grown sprouts for my family. How exactly do you use them? Also, I dehydrate leafy greens and add them to smoothies too! Great way to get them into my toddlers 😊

    You title got me, im from Australia. They toilet paper thing is odd. I have a 6 month stock pile and started mid jan. I was crazy then but now selfish.. I have 7 kids and im a single mother. Veggie patch is getting started.

    Some good insight and suggestions. One thing, are there any dangerous animals where you live; bears, mountain lions, snakes...ect I have not seen a handgun on Dan or yourself. Just curious. We always had guns from the suburbs to the farm and back. There were local militia, elder sons that helped with situations were we lived and aided sheriffs and their deputies from time to time. Very few incidents over the years back then; but times change and the world is not what it used to be. Just curious.

      I’m so sorry I had meant to explain that.
      First, cut out the spine.
      You can dehydrate on the lowest setting your oven will go until completely dry.
      Blend in your blender until finely ground and store in jars in a cold dry place.
      You can also use a dehydrator if you have one. Every dehydrator is different so you’ll have to keep and eye on it.

    Strangest thing I think about people prepping for the current problem and emptying store shelves is: prepping is supposed to be done BEFORE the trouble arrives, not when it is on one's doorstep.

      If you have a supportive spouse it can be done before. I had to use all the spaces my husband wouldn’t bother looking to store items and had constant complaints about why I bought more food when the pantry was full, or using excuses like camping to buy gear. I have a lot of ‘hobbies’ in his eyes - gardening and food preservation / making my own..... Now he didn’t even blink when I shopped to my hearts content :)
      In regards to why people don’t go for fresh produce. I live in an area with confirmed community spread where politicians still pretend its just the two people in the hospital with confirmed cases of unknown origin that are effected. I bought only those items that were pre-packaged and none of the loose items I would normally put into my own cotton bags after an older lady told me how appalled she was about someone sneezing all over the displayed pastries and I took that as a lesson learned.

      Sure, you could, but I think for a lot of people space would be the issue. I only just started seed saving last year so I have a ways to go before I'm at that point. Goals!
