A good friend of mine's Mom made this to die for. No critical but she used a whole chicken, liver, neck, and all. She browned the skin until I thought it was burned, but not black. One chicken with a bed of pasta would make a whole bunch of young boys very happy. Can't forget a fist full of fresh bread! Thank-you for all of your tips through the years!!!
@madmh6421 This seems like a great idea and I have a whole chicken in my freezer wondering what to do with. I like the idea of the very dark browning to the point of char + the variety of dark/white meat along with the organ meats - great, full balance of the entire bird! My Mom would serve over wide noodles, but any "bottom" works - or none.

I LOVED this Recipe for CHICKEN CACCIATORE, It's the same exact way I have been making chicken cacciatore for decades and it's absolutely DELICIOUS 🤤 THERE is no other way to make CACCIATORE I KNOW, I MAKE IT the way my Mother used to make it. The wyi was taught to by my MOM,🙏🙏🙏.
I made this last night. Left it the peppers and onions in exchange for pepper flakes and onion salt. The chicken practically melted in the stew if I stirred it. Served it over penne pasta. Perfect mix. Just warned up the leftovers and added extra cheese. The heat really came out the next day. Now making a round loaf from scratch to go with my leftovers, I have a lot of leftovers.

This was one of my moms favorites and I wanted to make your version for her. Unfortunately, she passed unexpectedly. Her 70th birthday would have been on Jan 24th, maybe Ill cook this for my family in her honor.
I use your original recipe plus use a few steps from Mario Batali: browning diced Pancetta and adding a few ribs of chopped Celery, plus double the sauce. Then I freeze it in single portions, it's a fantastic last-minute meal!
Used to make this with my mother. We would add extra sauce and finish it off with table spoon size drop dumplings to finish it off. Good times. Thanks Laura for the memory.

We used rabbit because that’s the hunters moon when you go hunting for food. I love polenta with the sauce and rabbit or chicken❤

I love cacciatore but not so much crushed. I use the puree( I like it smooth). I am not Italian but this is great for dipping bread into also.
Are mushrooms necessary or can I substitute something else
