I restore antique door hardware on a daily basis as I am an architectural salvage specialist. Paint stripper, steel wire brush and a drill with a steel wire bit makes this process 10 times faster and more effective.
Let the hardware sit in a pot of hot vinegar for 30 mins or so. Then buff lightly with steel wool if its plated. You can tell if its plated quickly with a magnet.

Any tips for hardware on a piece that is so old it doesn't have "modern" ways of getting it on and off? Working on an antique dresser with drawer pulls that are not on with screws but another old method.
Soak in white vinegar overnight and then clean off the rust with a wire brush or steel wool, that will remove rust. You need to add a finishing after though, the metal under the rust is a bit rough to the touch.
Brandon Wright agreed. After this video I spent 3 hours trying to make an old doorknob look good. When I was done it actually looked way worse than when I stared (100% rust looks old. 10%rust looks like carp). I just painted them grey.

Why is there no mention of testing for lead paint? This should be first and foremost with this old hardware.
Any suggestions for removing cabinet stain from hindges? I'm trying the method here with no improvement, no loosing of the stain.

I would like to do this but my hinges are not worth the time, replacement cost $10 for a 3 pack
