The first dish you tried wasn't chicken. It's actually steamed pork ribs. The meat is usually covered with some kind of rice flour and placed on top of either potatoes or yams. They steam it for a very long time, so the pork and potatoes melt right away in your mouth. One of my favorites!

Did anyone else catch the two older guys fighting to pay the bill @3:54 ? While the other guy was getting money out of his wallet, the other guy snuck in and payed the bill and even showed off his super fast, matrix-like blocking skills! LOL! One of my favorite things to do in video like these, is to watch the people in the background, especially in busy places like these...Just so much going on, and no matter how many times you re-watch a video, you can always find some new moment you never noticed before!

Hi Mark, I'm Malaysia Sabahan. At Sabah, most of the local is Hakka ethnic. We do have a lot of great Hakka cuisine dishes here, maybe both of u can think about it for ur next trip.

Good morning Mark what was that first dish? Did it have a name?? looked like Taiwanese pork Shepard's pie. lol The Mao bo Tofu look absolutely the bomb. That's also my Fav. In little Tokyo in LA there is a restaurant called Koraku. Its a standard working mans place not fancy but the foods great. The fried fish I know is good, never go wrong with fried fish. 粉蒸排骨 "Steamed Spareribs with Rice Flour" is layers of spare rib (boneless in this case?) coated a special, fragrant rice flour, steamed for a long, long time in a ramekin until the meat is tender soft and the flavors are well combined. Sounds like they use a special fermented "creamy" tofu to flavor this dish. Looks amazing.

If the restaurant you go to is awesome and the service is great, you may not want to see their kitchen...if it's a busy place, the kitchen may not be so clean during busy times and you may decide never to go back again. Let the chefs do their thing and the customer eat.

I also love Mapo Tofu, its so tasty and spicy and soft and fragrant. A simple dish, but definitely one of my favorite Sichuan dishes.

Hey Mark, that ground up spice stuff on top of the mapo doufu is the sichuan peppercorn itself! Called huā jiāo (花椒)in chinese
