Actually Zun incorporates a lot of Doujin work into his canon this is while the Scarlet Mansion and Yukari Yakumo are secondary characters, also because Marisa was popular its why she eventually befriended Reimu originally all of these characters were supposre to be just momentary antagonists for Reimu but because of Doujinshi Zun developed more cvomplex friendly relationships ... thought in his own works he actually emphasies on the humour aspect and the character interactions aren't meant to be to serious
MoP was created by a very skilled and talented group of people, same goes for SDD. This is still animated rather well, if you consider the majority of the fanmade things. I'd be entertained by an anime with an art style like this, and im sure many people would too.

Correction ZUN doesn't want the game licensed. It would limit what he wants to do with the games, and also limit what he wants to do with the print works. If it does gets licensed the games would get a manga and an anime thus giving the ending away and limit the multiple endings to one. which removes the want to play all the characters and remove speculation which ZUN actually likes.
I'd love to see a fan made anime of touhou, just not an official one. That would avert most if not all of the issues you brought up and would likely be higher quality than an official anime to boot.

The fans are the one that would make it a harem base but I know ZUN would never allow this. He probably did consider it but knew that it would go horribly wrong if left to only one artist and thought process. If you read the print works its full of those that are already fans. The anime would not be done by fans or even have that mindset. The print works are slice of life and fantasy the games are action fantasy. So that means 2 different anime art styles and thought process occurs.
Haha yeah that is really true. Example: I always though Shou was really strong and a spear fighter until Symposium of Post-mysticism... the moment I read that part something died in me XD
I will give you that Memories of Phantasm was well animated and the second A Summer's Day Dream was better than the first but as far as animation goes I think this ranks up there with them, at least their openings. If you are talking about the pencil sketch scenes in the beginning and end and the lack of background, read the description... it's only 90% complete. The style is also, in my opinion, much better than that of A Summer's Day Dream and ties with Memories of Phantasm.
