Thank you, Steve, for bringing such a fun and explorative approach. As an agave spirit lover in California, who mostly sips neat, this looks like so much fun. 🙏👏😀
Tried the autoretrato as per the recipe and found it too sweet. But tried again and did the same as you by dialling back the amaretto and agave and also upped the pisco a little bit. Now it's perfectly balanced. Loving this drink!
I love tequila! Usually start my day with a mini Bloody Maria. Those pastel drinks are some of the prettiest I've ever seen. Your Spanish is not too bad. Actually, Italian vowels are similar, so going with Italian will serve you pretty well. Spanish vowels never change. Once you get the hang of them, pronunciation is easy. H will usually be silent. J will usually sound like H. Double LL will usually sound like a Y. There you go! Cheers and Happy New Year from Indiana!
Not sure if you covered it previously, but i recently stumbled across the 'Spicy Dead Lady' which is delicious! If not familiar i highly recommend it! Its equal parts Mezcal, Aperol, falernum and lime juice, with a dash of habanero tincture (such as Scrappy's Firewater).
@@StevetheBartender_ When you were trying to say the name of the drink, I decided to look up the translation. Hence my question, since you had a odd look on your face.
When I read the title I thought you meant New Mexico Style cocktails. Like the state of New Mexico(NM), NM has some pretty nice local cocktails that use their local ingredients/traditions to put their own delicious spin on things. Would definitely love to see a video of you making & reviewing some!!
I loved this post! Fortaleza is also my favorite tequila. Especially the reposado.Where on earth did you find it? I'm in the Western US and have searched 4 western states for 2 years with no luck. It used to be readily available but no more. Keep inspiring mate👍🏼
I made the Conservatorio and riffed the Mezcalita Xipe. I didn't want to bother with charring pineapple or sourcing worm salt, so I opted to make a few substitutions. First up: 3 drops of saline solution for an even brininess, 3 drops of Hellfire bitters to accentuate the mezcal and ginger syrup, and a little MSG to give a little umami to balance the cocktail's acidity and spice in place of the earthiness that would be in the worm salt. Btw, freshly ground cardamom is such a nice and warming garnish. I'm surprised it's not used more.
For the Carajillo Madre, I made it with a local Vodka 1st. It was good, but I thought it could have been better. So, I subbed 21 Seeds Valencia Tequila for the Vodka. Fantastic! I didn't have the spirulina, but I figured that was little more than color......
Ancho Reyes, I bought a bottle 2 years ago and I'm afraid that I will still have that same bottle in about 10 years. I tried it in some cocktails, I just can't stand it
What I love and hate about these cocktails is the ingredient requirements, which I will probably only use once. They all sound so good. I have difficulty determining if I should get the ingredients, like a whole can of coconut milk or evaporated milk.
I mean, I would; the only thing is they may have intended for more dilution or maybe the cold extraction has a somewhat less concentrated flavor that they’re aiming for. Maybe just a hibiscus syrup where you hit a boil without sugar, turn off and let steep for like thirty before straining and combining with sugar
I guess it's open to interpretation... I would normally say a tiki mug is South Pacific inspired... but then it would rule out the mug that drink was meant to be served in 🤔
Funny thing that this is about "mexican" cocktails but most of the ingredients are expensive and very difficult to find here in Mexico e.g. Geen Chartreuse or Amaretto :(
Your Spanish isn't bad at all, considering you don't speak it. You have what it takes to do it well, you should learn Spanish. Yo no soy Mejicana, soy Sudamericana. Anímate y aprende el idioma hablado por mas países en el mundo.

Steve, "My Spanish is a little rusty."
Also Steve, "Actually I don't speak Spanish."
Me: 🤣🤣😂😂🤣🤣😂😂

Dude..... These cocktails are speaking to me. Agave spirits and these flavors are the best.
Cómo suscriptor mexicano de tu canal solo puedo decir you are amazing y no he probado todos pero el Mictlán es delicioso

This christmas I got a bottle of mezcal so the timing of this video is perfect! Thanks, Steve!!

Good Morning Steve.
Good morning!
@@StevetheBartender_ The name of the first Cocktail drink, is that really the translation for "Carajillo Madre?" More is that a variation of it?
What translation? I don’t understand your question.

Thank you! Glad you enjoy the vids 🙌
Great stuff. I'm definitely going to try some of those drinks.
Thanks dude
Love seeing more tequila cocktails

Thanks for these! I'm going to give the Gallito a spin for sure!
Yes I need more Mexican cocktails, my go to is a Paloma and I need to expand my selection
I haven’t tried too many mezcals but this video makes for a compelling argument! Thanks Steve 🥂
Awesome, thanks ! What ratio did you use with hibiscus to water for the infusion ?
Очень заинтересовал Gallito, сделаю его в первую очередь =)
These look great Steve
Thanks mate :-)
I'll have to try the Xipe. It sounds a lot like another drink that I've had, where prickly pear replaces the pineapple.
Hmm some interesting ones in this video. Not sure which I will try first...

Went to Madre Cafe last year. Missed out on the cocktails because it was too early but they also have hella good pastries
Whats' with the blue box with 'gimlet' in the middle of the screen when measuring out the yoghurt?
Ah feck. That wasn’t in the first round of edits!! My editor must have accidentally popped it in there somehow, whoops!
Hi Steve, interesting show and I’ve noticed some of these on the App. I will try one or two over the coming days.
Nick from York
Another book for my collection!!
One day I will post my bloopers , but fair warning it would be R rated. Lots of strong Irish accented swear words lol
Well done and entertaining to watch. We'll try Autocratio (?)
Would the first one work well with blanco tequila in place of the vodka? (Maybe not cardamom for garnish in that case?)
Ancho Reyes, I bought a bottle 2 years ago and I'm afraid that I will still have that same bottle in about 10 years. I tried it in some cocktails, I just can't stand it
Looking at the recent bartender RUclipsr videos I feel using beakers is the new thing to do lol. Looks cool!
I just saw your cocktail
I don't get the Gimlet graphic?

I think there may have been an editing mistake at 21:35
Yep..

Coconut milk can be used in plenty of drinks although evaporated is rarely used..
I make a hibiscus syrup can I just substitute that instead of the hibiscus water and simple syrup?

What is a Tiki mug ?
Like what defines it?

@@StevetheBartender_ thank you ☺️
ay dios mio
Not listing recipes in description anymore? Gotta bring that back mate, way easier
I still add recipes in 99% of videos. These will be found in my app too.
Evaporated milk is neither sweetened nor condensed….
Yes, that’s correct.
Funny thing that this is about "mexican" cocktails but most of the ingredients are expensive and very difficult to find here in Mexico e.g. Geen Chartreuse or Amaretto :(
They’re not traditional Mexican cocktails.. they are modern creations from Mexico City bars.
Worm salt 😮 Ive never heard of it. I think I’ll pass on the worms 🪱
Mezcal is wonderful. Tequila is mid.

Too much horchata....
@stevethebartender
Ancho Reyes VERDE is poblano 👍
Not a fan of Mezcal. I might try these with Tequila.
