This is the North American Florida soft-shelled turtle, also called "pearl soft-shelled turtle" because of the white spots on its neck. After it entered China from the United States about 30 years ago, it proliferated as an invasive species, but the Chinese soon discovered that they were delicious, so now they need to be bred to meet the supply. Amphibian reptiles often have parasites in their bodies, so cooking takes more time to ensure food safety. The soft shell turtle's yellow grease was not delicious, so Uncle's cooking was not successful.
No different to farm raising sheep or cows. different parts of the world with different cultures that eat different foods. it doesn't make it wrong because of where you're from or what you were raised eating
