    How do i adjust the fan speed from high to low?

      There should be a low fan speed button. Depending on the model# some of the gas models do not have low fan speed. If you have any additional questions, please call us at 800-722-5460.

    How come our door wont stay open anymore but keep closing on us trying to take stuff in and out. What do you think needs to be fixed? Thanks!

    The specification sheet for the E32 says that the appliance sides need to have 12 inches of clearance from a heat source. This kitchen set up does not seem to have that spacing from what looks to be a cook unit to the right of the oven. Am I reading the spec sheet incorrectly?

    can you use stone slabs in there for baking things like pizza crusts and crackers?

      Great question! Yes, you can use a baking stone slab in Moffat ovens. Please measure the stone and oven cavity to make sure the stone will fit without scratching the porcelain enameled oven chamber. If you have more questions, please contact us at info@redcofoodequip.com

    We are already sold on it because we can turn the fan down so the tops of the batter doesn't get splashed around! But what I need to know before we buy is we don't have money for costly hood and vent work run, do we NEED a vent system... s0 tell me more about the exhaust system! I was thinking we only need this. More info, please

      However, it is still always at the discretion of your local inspector.

    If you're using in a kitchen with no hood, do you think it would cause the kitchen to get hot quickly? We have this problem with blodgett and vulcan electric convection ovens right now.

      Not as quickly, though it does have some heat output. However, the lining inside of the Moffat oven chamber is made up of vitreous enamel which is an excellent heat conductor meaning less work needs to be done by the motor because the heat stays inside the oven for even longer.

      Hello,
      There is a steam function button located on the control panel of the E32. By pressing this key, you can set the moisture level.

      Yes. The Moffat E32 will accommodate (5) 18" x 26" full size sheet trays.

    Do you have to have a hood system if you are using this oven?? Only making pizza at restaurant.

      No, it has been approved by UL for ventless application. Your local municipality will have final say though and ventless hoods are available for the ovens if that is a rare case.

      There is no residential version, per say. However there are some customers that have installed this residentially.
