If you want a challenge, try assembling one of these grills ruclips.net/user/postUgkxCx5fHawkK9OoV-ojFrY8JLnZrFwAmvUt . I am a technician by trade and the technical instructions were easy to follow. No reading, just pictures and diagrams. You assemble everything in 5 steps from the bottom up. Step #1 - Assemble 4 Legs and Wheels; Step #2 - Add the Front Cover and Cross Bars to support the frame; Step #3- Assemble the Burner to the Lower Grill Housing and install the knobs; Step #4 - Install the Side Burner and side shelf; and Finally Step #5 - Install the Upper Char- Broil Lid, Cooking Racks, 3 Burner Railings and Lid Handle. That's It and you're done in about 2 hours and 40 minutes. You have the option to pay for assembly after making the purchase - I would strongly suggest that you take it if you don't want to be bothered with this challenge. The only tool I used was a Phillips head screwdriver and a standard pair of pliers. The grill cost a little more because of the side burner, but this is what makes the grill so versatile and popular among backyard grillers. Have fun and enjoy!

I’m a Alabama boy and being military have lived all over the country and tried all different kinds of BBQ, and I can say with no doubt you Texas boys have brisket down to an art form. Best in the country, IMO. While I feel differently about bbq spare ribs, pulled pork, baby backs, chicken, etc. (I think we do all those better down South) there is no question in my mind that Texas brisket is the best on the planet. Thanks for an excellent video, y’all keep on keepin’ on. 👍

I've used stick burners for over 20 years, nobody was more against pellet smokers than I was up until about a year ago when my cousin bought a portable one for one of our cabin trips. I was really impressed with how it cooked, but more so that I didn't have to get out of the river early to get the pit started up. Since then I've bought a pitboss Lexington model for the backyard patio, plus a tabletop portable one for the cabin. With a wife and kids, plus working about
50-55 hours a week it's harder these days to consistently use the old pit (Sandy is her name). Plus the prices for a bag of pellets are very cheap. I'm a stick burner at heart and still like to fire it up every now and then. Especially in the winter time. But I've found there is a place in the BBQ world for pellet smokers. Times are changing and it's adapt or die (maybe a little overboard with that saying). Anyways, keep up the good work and making these awesome videos. I've just recently come across them but you've got a new subscriber with this fellow Texan. Prosit!

You couldn't said it better. My friend is been a hardcore stick smoker as well. I've been around him while smoking. One day I decided I wanted a smoker. Did my research on both and decided on the pellet. He asked me about it. I told him my experience with it and he went and bought a pit boss 850 pro. Been enjoying it ever since. Cheers from Texas too

I've done both for years and now I favor pellet smokers. Through trial, I've learned the key to pellet smokers are the brand of Pellets. "Lumber Jack" brand is the absolute best in my opinion, but they are a bit difficult to find. 2nd best are "bear mountain" Pellets sold at most tractor supply stores. These two brands are the purest and put out the most smoke I think.

The only thing it can't do worth a flip is boston butt steaks. You still need a direct heat charcoal for that. I am a heavy smoke guy and prefer the stick burner. I love playing with fire and dead things, been doing it a long time. I prefer real wood, playing with fire is the fun part. The electric's are easy and do a good job, but, fire doesn't need a plug in and/or get hot enough. I flame grill on a kettle and cook pit bbq on it all the time. I either, smoke all day long and move the fire under the grill and do veggies, taters and bread or just build a hot fire to grill steak, burgers, seafood, etc. I really like the pellet's ease of smoking fish, birds and jerky, I like it's precision. I use the big propane burner on my pellet stove a lot, probably use it as much as the smoker. Great video.

Pretty fair comparison. I opt for a GMG most of the time. Comparing offset and pellet is like comparing a charbroiled steak like a PK grill to a pan seared. Both are delicious. Both can develop a great crust. Different technique will have a different result.
My pellet grill turns out great BBQ but it’s not quite the same as an offset. (And don’t get me started on drum smokers.)
But I think I’ll start a brisket fat side down (3-4 hrs) on my Pit Barrel and then transfer to my GMG. Great stuff AT.

I've gotten to old for those 16 to 18 hour smokes on my offset.
These days I'll smoke the brisket for around 8 hours and then move it to the pellet pooper to finish.
This way I can get a little shut eye with the remote on my nightstand to give me a heads up if something isnt kosher.
This works great for me since you get that good smoke from the offset and the precision of the pellet pooper when the final temps are so important.
I found that the pellet poopers just dont have that quality smoke you get from the stick burner. Just like using kiln dried splits, they're just to dry.
I'd rather have a side fire to get the splits going that still have a bit of moisture in em because they impart a much better smoke profile.

I wrap in foil when its time. His brisket had actual smoke flavor that I am super jealous of. This is seriously the best video I have ever seen of the side by side comparison. I used stick burners for 10 plus years until 2 years ago and got a pellet. The first few cooks I hated the product off the pellet it's not even close with the flavor. As time went on and the ease of use and the steady Temps with the set it and forget it ability it wins esp in the south during the summer when it's 98° with the humidity and feels like 109° and you are producing more sweat than smoke. But still to this day, even though I use the pellet at least 3 times a week and have grown accustomed to what it can do. The stick burner will always be king. At the end of the day, if you and your family like the food, that's all that matters. I don't get the stick vs. pellet like I will never understand the bow hunters vs the gun hunters it's pretty much the same.

I have a 2 pellet smokers (Cookshack FEC-100) not a pellet grill and I’ll put my briskets, pork or chicken up against any stick burner! I’ve had lots of stick burners. The last one I had was a Jambo, but stick burner made and I nor my wife or any of my customers could tell which cooker my protein was cooked on. I competed on the KCBS circuit with my 2 pellet smokers and have some trophies and the Jack Daniel’s World BBQ championship has been won by a pellet smoker. Do I still use a stick burner or a charcoal smoker, when I have time but I can sleep or do chores or ever run in to town while smoking with my pellet smokers. Work smarter, not harder. I seldom have time to babysit a stick burner! Many people will argue till they die against pellets and most have had a cheap pellet grill, they have never owned a top notch pellet smoker. There’s a huge difference and also, most don’t know there is also a huge difference in pellet brands and whether they are 100 percent or a blend!

I start out on the Stick burner get 4 or 5 hours of good smoke onto the brisket, Then when I'm happy with the bark and color I wrap (yes butcher paper) and switch it to the Pellet popper and go to bed (with my fire board connected) See I'm lazy lol comes out great! In the spring and fall when the high for the day is in the 70's I don't mind being out at the smoker 12 to 15 hours but in the summer (even today 5/18 its gonna be 100 degrees!?!? way to hot to sit out for 15 hours)

I have been considering to get a pellet smoker thinking about doing the very same strategy that your are doing. A respected pit maker suggested I get an electric smoker instead in order to continue the cook after the initial 4 or 5 hours. However, I am not sure whether electric smokers can produce the quality of the bark that a pellet smoker can. I am undecided. Perhaps Arnie can shed a light.

    • @GadjetGriller

@@CoolJay77 I wait until I have the bark (and color) I like then wrap. So the pellet grill is really just a oven, finishing off the protein. You can do the same thing with your oven my pellet grill keeps a constant temp where the oven cycles off and on with a 20 degree swing, so I use the pellet grill. The electric smoker could do the same thing. The electric smokers put out almost no smoke flavor bad for meat but actually pretty good with fish and fowl. (I started out on a electric cabinet smoker) so either way would work.

@@GadjetGriller Thanks for your input. The kitchen oven will not generate dark bark. The smoke from the pellet grill will. I am wondering whether after smoking in a stick burner for 4 to 5 hours, an electric smoker will produce dark bark, either left naked throughout, or in foil boat at some point. I may have to get an electric smoker to experiment, and if not satisfied, I'll go your route, by getting a pellet grill. I can always make use of the electric smoker as a warmer .

Although the "set it and forget it" aka, the Pellet Grills are on Huge demand, It does not mean that pellet grillls are in any way, "superior" to anyone other than "the lazy". There have been tons of back-yard as well as professionals in the bbq world that have tested both methods and most agree in the fact that you mentioned, "pellet grills do have their place", but according to 95% of the professionals, Nothing compares to what you get from an authentic, Real Wood fire flavor that you can only get from the long lived, tried and true results that you can ONLY achieve by using an Offset Stick burner style smoker. Amen brother, Texas has the best BBQ. I'm sure the stick-burner is going to make a more authentic and probably better brisket providing that everything is done right, by a pitmaster (which I am not). I think using a good pellet smoker is probably going to give the occasional smoker more consistent results--and he or she can always upgrade to stick-burning. Thank you for putting all the love into this head to head competition. I believe that you are a stick-burner snob, and if you say the pellet brisket is almost just as good, then I'm sure it's good enough for me. BTW, I had brisket in San Antonio (Texas Pride), Austin (Salt Lick), Taylor (Louie Mueller's), and Dallas (Pecan Lodge). Pecan Lodge was my favorite; but Texas Pride was my first, and I couldn't believe how tender and delicious everything was. It changed my life and I think it's rare to find good brisket outside of Texas unless you can do it yourself. To everyone who thinks using a smoker is easy, or cheating, you still have to buy the right brisket, trim it properly, season it properly, cook it properly, wrap it at the right time with the right paper, and push through the stall, and let it rest.... so don't think it's easy to make a killer brisket just because you're using pellets.

For a big purchase item like brisket it may be worth it to go stick burner. But you can get pretty close with a pellet grill especially if you add some wood chucks onto the heat deflector. I think the main benefit of a pellet grill is you can kind of go out every night weather permitting and knock out a nice meal. On your way home from work, use wifi to get it up to temp, get home, prep the food, put it on and you are having dinner as fast or faster than if you'd made it inside and it gives you a smoke/grill flavor.

Charcoal and wood is always gonna top wood pellets for me. I have a pellet grill and do chickens and tritips on it because I love the simplicity of it and the lighter smoke on those meats. I’ll use the charcoal and wood in a grill for my larger cuts like brisket or a leg of lamb.
Have not gotten a stick burner but once my charcoal grill does end up dying I’ll get an offset and start trying the wood only option.

You can add small wood chips to the pellets (50/50 ratio) to get the same exact smoky flavor as the stick burner grills. Fuck babysitting a brisket for 12 hours with a stick burning grill. Just throw a brisket in a pellet grill at 9 PM & forget about it until 9 AM, then take it out & throw it into an Igloo for a few hours until you are ready to eat it. Perfect every time. Super easy.

  • @MXvsATV144
    @MXvsATV144 Год назад

I think the main difference is when you’re making food with wood chips, you are only getting them to smolder because you have another source for the heat, which on my MasterBuilt is a electric coil… which is why they have so much smoke and flavor whereas the pellet grill is literally burning it’s wood source for heat, those pellets aren’t smoldering but set on fire for heat…. but if you were to put pellets in a wood chip grill and only let them smolder in the same way instead of burn, they can produce a lot of that same flavor and smoke. I ran out of wood chips for my masterbuilt one time for a pork shoulder and so I loaded the tray with pellets and got the same results with the amount of smoke clouds coming out, and the flavor, because the pellets are allowed to very slowly burn/smolder instead of set ablaze. But what I do now is just toss in some wood chips in the pellet grill or use the wood chip grill for its initial 2-3 hours of smoking and then finish it on the pellet grill.

A side thought about bbq houses not switching over to pellet grills may be electric or gas assist. I've seen my fair share now that are using the wood more for the flavoring and less for the actual heat output.

To keep from having to babysit my stick burner for prolonged smoke sessions, I also now do a hybrid cook method that I’d love to see you add as a third comparison: Sous vide brisket.
I set & forget a dry seasoned brisket in my sous vide water bath at 155° for 24 hours. Rest overnight in the fridge. Then finish with a relatively easy 4 hour smoke session at 250° on my offset stick burner. The sous vide session fully cooks and breaks down the collagens leaving a perfectly moist and tender “roast” but then the pit session gives it the bark, flavor and authentic smoke ring we all love.
Is it better than $30/lb brisket you find at all the acclaimed Texas BBQ joints? Admittedly no. But it’s definitely worth $29.75. And you can’t beat the relative ease and lack of time & effort required. This hybrid method also works phenomenally well with dino ribs and pork butts too.

Speaking of beer belly panzas, now don’t get me wrong, when I have the time to dedicate an entire day to a 14+ hour smoke (aka all-day beer drinking) session, then it’s a mighty fine way to pass the while. But the older I get, the fewer those days seem to avail themselves.
And it goes without saying, once I switched over, a month’s firewood supply now lasts me an entire season.
