⭐️ Creamy, rich, tasty, and with browned mushroom pieces, our mushroom gravy is a terrific sauce for holiday meals and family dinners.
⭐️ Ingredients
Sautéed Mushrooms
1 tablespoon extra virgin olive oil
1 pound mushrooms sliced ⅛ inch or 3mm thick
¼ teaspoon salt
⅛ teaspoon black pepper
2 cloves garlic
Gravy
2 tablespoons butter or dairy-free butter
4 tablespoons all-purpose flour
2 cups vegetable broth
1 sprig rosemary
1 tablespoons soy sauce
½ teaspoon salt or more to taste
⅛ teaspoon black pepper

Add the oil AFTER the mushrooms have released their water and the pan has dried out. They'll release their water faster.
And you'll get nice browned mushrooms
Add salt after the mushrooms have been cooked, otherwise they get rubbery and tough.
Dry fry first.
Cover the mushrooms with water and boil til dry and then add oil and butter. Much better texture.
Exactly, add oil after water is cooked off.

I'm always impressed how you're able to do everything without looking at the pan or cutting board! I bet you could cook blindfolded!
The reason your mushrooms did not get golden brown is you added them to oil first. You must add sliced mushrooms to a dry pan and they will slightly brown after a few minutes. Next, they will begin releasing their water so cook them until all liquid is gone and the caramelization will now begin. Add your butter at that point scraping the pan of all that goodness then season with salt and pepper and desired seasonings. Anddd, Wah-lah!! Beautiful golden mushrooms...

Not true, my mushrooms always brown and I always put the oil first and then butter.
This is exactly how my grandmother used to make it, except she added two or three tablespoons of sour cream. And of course, she had no soy sauce, so she added some sprigs of lovage (which is not easy to find these days) for the umami.
yes, adding cream instead of flour, is better (and keto), you can add a scallion and parsley when cooking the mushrooms also

The first time I was told I could wash mushrooms. It doesn’t seem to have caused any problems with this recipe. It looks delicious!
The idea that washing your shrooms is bad is nearly a complete myth. It slightly makes them contain more water if you wash them for too long which could lead to overcooking, but unless ur going for michellin starts, its completely fine to wash them
Looks delish! Depending on what I’m serving it with I’ll sometimes add port or sherry . It’s fabulous with polenta.

I used to make tis all the time..sometimes served with egg noodles.( and venison meatloaf) but then thanks to 5 botched intestional operations couldnt eat mushrooms ( blockage) found that i could put mushrooms into blender till smooth..still yummy.

this is a velouté of mushrooms in traditional french cuisine (established by escoffier)
for veloute
- butter flower = roux
- add stock = roux becomes a veloute
sometimes you can add yolk and cream
( if you add milk instead of stock is bechamel, milk+cheese is mornay)
and mushroom cooked in the velouté, you can blitz half of it and keep the rest for texture

My family's mushroom gravy is onions, mushrooms, and sherry. It's easier because my family is lazy. Get a little brown on the onions, throw in the mushrooms, and pour in the sherry. Cook til no alcohol.

Instead of flower, you can add cooked potato to thicken the gravy…blend and add to the pot…and I think red wine is also great to add…there is even non- alcoholic red wine available…

This is almost how I make mushroom soup, except for cream at the end, no soy sauce, and thyme instead of rosemary. Bit of a difference in the consistency too.
