- Ingredients:
10 dried scallops
1/2 cup salted pork / pork belly
1 pack frozen sea cucumbers (17.5 oz)
1 shallot
3 cloves of garlic
8 ginger slices
1 lettuce
1/4 tsp salt
1 tbsp oyster sauce
1-2 tsp shaoxing wine
1 cup of water
scallop water
1/2 tsp dark soy sauce
cornstarch slurry (1 tsp cornstarch + 2 tsp water)
Pork marinate:
1/2 tsp salt on the night before to make salted pork
to that, add 1/2 tsp soy sauce & 1 tsp cornstarch
Blanch sea cucumbers with:
water
2 ginger slices
1 tsp shaoxing wine

材料:
10 粒 乾瑤柱
1/2 碗 鹹豬肉 / 豬腩肉
1 包 急凍海參 (17.5 安士)
1 個 紅蔥頭
3 瓣 蒜頭
8 片薑
1 個 生菜
1/4 茶匙 鹽
1 湯匙 蠔油
1-2 茶匙 紹興酒
1 杯 清水
瑤柱水
1/2 茶匙 老抽
粟粉水 (1 茶匙 粟粉 + 2 茶匙 清水)
醃豬肉:
前一晚用1/2 茶匙鹽醃制
煮之前, 加1茶匙生抽 & 1 茶匙 粟粉
海參汆水:
水
2 塊薑片
1 茶匙 紹酒
