Second you increased your reservoir which takes longer to fill back up and when that happens the waterwheels produce less power. Third a lot of water gets shunned of the map trough the dams before it can go trough the waterwheels. Once the earth repopulator is built you can turn off all heavy industry and just keep food production. That way would injuries decrease and more free time for the bevers. Just make sure to build up a storage of dirt to keep the mud baths going.
It may be a good idea to get some builders back, and just more haulers in general. To save space, you could go to the mangrove pool and blast down another side(either of the two that aren't on the edge of the map) by 1 tile and line it with overhangs again, just make it another collection of builders and hauling posts. Not like you don't have the spare beavers to put in a handful of each, after all. For the power needs, it's not impossible to extend the water channel to add more power wheels, though it'd take some figuring out. But, since it's already suspended, it'd mostly just be a matter of arranging platforms and overhangs and figuring out which very specific tiles they need to go in. I don't think it would be offsides to say bye to the overhangs at the very end of the channel, in favor of extending the power wheel channel all the way back to the reservoir and back again to the original drop-off point. That way, you get a ton more power wheels and don't have to alter much on the ground level. It would definitely be a project, but not impossible.
A bit about power issues: If you aren't looking at engines/power wheels then an alternative thing could be to make an extension to the power aqueduct but just zigzagging over the impermeable river. Easy to build. Quick & efficient. Also, that step down power aqueduct segment can be recalibrated into a series of multi level water wheels. One on top of the other (obviously on top metal platforms). Current step down setup isn't the most efficient thing and if you are having power issues then it might be necessary.
Hey mate I've watched a few of your videos. What I've found with messing around with the dev controls is that food is consumed at different rates and not always linear. So Mushrooms and Algae are easy cause there is only 2 options and you can just switch the recipe to play with it. But with everything else I've found that the beavers seem to have preferences. So for example the ratio of corn vs kohlrabies isn't linear when you add a 3rd option. My builds aren't as nicely symmetric as you, but I over plant the one crop and then slowly reduce it as the volume in storage is building vs the other newly added food. I'd plant that whole other area full of canola and then slowly change what is being grown in the current canola spot. Regarding power, adding flywheels is like adding batteries or similar to adding water storage without adding more pumps. You could have 100 flywheels, but they are going to split the charge rate of your surplus power. So 100 might get 70hp each/hr and 10 would get 700hp/hr. Your recharge rate will always be constant, just your stored capacity increases.
Maybe you should add a lot more haulers somewhere, perhaps on top of the reservoir or on the green space opposite to the tree farm ? It should take care of your lack of dirt in the mud bath problems, and the distance between the bad water pumps and the industries using bas water
Don't forget to build some teeth grinders for the lumberjacks. edit: Also, you've reach the overpopulation as there is not enough beds as well as too much breeder pods.

less than 1k water throughout the video is very dangerous for almost 500 beavers even though you have a giant storage... please keep water pumped and stored too...
The problem with food got worse when you reduced the work hours to 12.. There's a lot of kohlrabies and corns to be harvested... Maybe put some more farmhouses (or increase the work hours) shoud solve the problem.
