The key element is removing the feet from the couch. Yes the wrapping takes time but you will be thankful you did in bad weather, or if the furniture has to be stored. Also the couch will still be clean when it reaches its destination.

You could wait to do the top and just role it on its back and knees after you get the sides. Also the feet were small enough to stay on unless you moving out of 1800 farm house. With the right angle you can get it out the door without touching the door threshold

To do a professional job takes time. To wrap and protect the furniture takes time. I don't like it when you take the time to do it right and the customer complains that it is taking too long.
Is U-Haul a good place to get the plastic from? Also would I need a tarp if I am using a pickup truck for a couch? Would a couch fit in a Chevrolet Silverado?
No straps to secure the couch, only plastic wrap? If I tried this the wrap would definitely rip on the second step and the couch would go tumbling down.

Taping it to the dolly ? NO. He could have knotted a random rope across the middle of the sofa. He grabbed the handle of the dolly on the stairs ? He JUST taped it. Just carry the one end. You even heaped plastic on those corners to grab/control. There's no reason to grab metal/dolly anymore. I will give props for the truck door dip, THAT was on point.

You won't be able to one man that couch on a dolly with all stairs. Some will be narrower and the turn won't be as wide. Sometimes you just have to pick it up with another guy and go.

July 26 you can get smaller rolls from home depot, lowes and even a uhaul store. Instead of 2ft thick theyre like 10-12" thick though.
