- Today we learn how to make what may be the best chocolate chip cookies recipe. Created by Jacques Torres, famous chocolatier, these cookies use two different types of flour and require a rest overnight in the fridge. Two kinda annoying things to get but they result in the most incredible cookies ever.

This is one of the most underrated RUclips channels out there.
I already tried two of your recipes (Pasta alla Gricia and Penne alla Vodka) and they were absolutely delicious (everyone I cooked them for loved them!).
The quality of your videos is beyond every other cooking channel I like to watch on here. Presentation, shown techniques, replicability, entertainment and your love to details and explanations are spot on.
This is real craftsmanship you are showing us here in great detail and the best thing is: Your tips actually work really well! One can learn a lot here to further improve their own skills.
And thats why I love watching cooking videos instead of just reading plain text recipes, because there is so much that can be delivered via image and audio.
Keep them coming buddy! I'm gonna go through your whole library of recipes and tips and get even fatter on the way 😂.
Greetings from Germany!
Totally agree! Just discovered him in the past month and have been binging!!
I couldn’t agree more!
Ditto, dude is amazing
Love his no nonsense approach
Bang on right it is. And I’m a serious home chef.
+100 points for using Willy Wonka music.
Okay so I wasn’t hearing things
Right! In the tunnel. Pure imagination
Jeremy MacCarthy Actually not in the tunnel. He sang this when they entered the factory for the first time. He was dancing on the stairs. From what I remember.
I'm interested in a link to this backing music if anyone has it.

Would love to see this turn into a series! "The quest for perfect chocolate chip cookies" where you keep trying new recipes from different people and in the end you make your own recipe based on everything you've learned from the others
It’s been done to death. Try this one. www.chefsteps.com/activities/the-ultimate-guide-to-chocolate-chip-cookies-behold-the-cookie-calculator
Thank you for this recipe! I must have watched hundreds of recipes on youtube, and this is the first time that I've actually made a recipe after watching it. I've made these cookies using the exact method described here to the letter, with the best ingredients available: great 60% chocolate, high quality flours (easy to find cake and bread flours where I live), etc...
The results: best cookie I ever ate, I got extremely good feedback from my friends and family who tasted it, this cookie is simply perfect.
Some comments:
The quantities in this recipe gave me cookies FILLED with chocolate, I later tried to make a second batch that had somewhat less chocolate (about 10-15% less), and the results were excellent, there was still plenty of chocolate but you also could see some chewy doughy parts, which was nice. In this second batch, I also reduced the amount of sugars by 10% and it wasn't a problem.
In my oven, 18 minutes baking time is WAY too long, I assume that this is because every oven is somewhat different. I used your rule of thumb that we should take the cookies out of the oven when they start to crisp around the edges (was about 14 minutes in my case), and it worked perfectly. The cookies came out exactly as described: crispy around the edges, chewy in the middle, and gooey chocolatey in the center. The flakey salt added such a nice "kick" that it cannot be ignored. It was important to let them cool down fully, that's when they became the most chewy.
Due to requests from my friends, I experimented with adding some white chocolate to the cookies, those turned out amazing as well, if you like white chocolate they're even better.
Once again, thank you for this video and for this channel!
Brother, I have forever had Food Wishes as that channel that I watch not only for the education, but for the viewing pleasure. You are now the second on that two-channel list. Love the direct nature of the material, which matches the simplicity of the Italian dishes you lean toward. Your media makes my life better. Thank you for what you do, and for refocusing my attention on pasta. :-)
That makes two of us Sir haha!!!
Well hello!! I'm just as you! I love chef John! The old tappa tappa! And now I'm in love with this guy and his ways. He works hard and is so enjoyable to hear and watch. I'm a fan for sure
I’m a huge Chef John fan. Also Christine Cushing. Learn a ton from them. This channel also great.
"Crunchy bottom." Best garage band name *EVER.*
I ordered cake and bread flour, and just made these today. Best cookie I’ve ever had!
My mom's recipe includes a tablespoon of dark rum incorporated in the dough, litteraly unbeatable
Dark spiced rum??? Thanks for sharing
Thanks for the tip!
And if you're not risk averse, a smidgen of tonka bean.
@@kwhatten never heard of Tonka bean. Do you grate it? How much do you use in a chocolate chip cookie recipe?
This channel is such a labor of love. You deserve to blow all the way up.
Your channel has got me wanting to cook again. Dropped out of my culinary degree- worked for a restaurant that kind of killed my passion for chewing. You bridge the gap between having great technique like a chef with a cook’s joyful self expression.
Beautifully shot and so love it.
The ambient version of Pure Imagination... its these details!!
Thank you for your generous sharing.
I'm came here for the cookies and ended up staying for that acoustic pure imagination song. Damn that song put me in a good mood!
It would have for me if it was the original but copyright and stuff so I'm not gonna complain.
Literally waited all day for this!!
When the cookie is so good you end up with Chocolate on your arms
This is easily one of the best cooking channels on youtube!
Thank you! Your food demos are always awesome. The quality of your video is professional.
Yessss definitely going to bake it thank you for the recipe 😍😍
yes !!!! after trying maybe 4 or 5 "best cookie ever" recipe and being disappointed everytime, this is THE ONE ! fucking miracle
Love this recipe,,, thanks for sharing
Made these last night. I have a personal recipe where I use dark brown sugar, brown butter and cocoa powder. Either way, these were DELICIOUS! I’d like to incorporate both this recipe and my own. Very interested to see how they would come out. The cake flour gave it a different texture but not too different from the all purpose/bread flour recipe I use. Thanks for the content. Can’t wait for the next recipe!
Pure Imagination!!!!
I love this channel.
I made these with all purpose and was too impatient to age the dough, but they are still fantastic! Definitely loved the melting chocolate chips, will do this from now on. Perfect balance of chewy and crispy
Loooove your channel! And this recipe is dangerously good!
I made this and I must say, it was exquisite. I simply cannot believe how lovely it was. Well and truly the only cookie recipe one would need.
I was sold just seeing the photo! Excited to watch this.
Love your channel! Thank you and keep it up!!!
Absolutely delicious!
Great demonstration from our fav cooking channel. 🥰
I've been thinking about chocolate chip cookies for about 3 weeks now and had been working through a number of recipes looking for this one. This is it. Thank you. Managed to get 2 dozen ice-cream-scoop sized cookies out of the recipe. Question: have you tried it with milk chocolate callets/ buttons?
If folks can't find cake flour at this time, you can "make" a cup of cake flour by taking 1 cup of AP flour and removing 2 Tbsp and then replacing them with 2 Tbsp of cornstarch. Works in a pinch, or during a pandemic.
I'm gonna try this, Thanks Steve for sharing the recipe 😉, hugss
You've given me hope to try n make cookies again. Mahalo
The soft crunch sound..... 😋
This is also my go to chocolate "chip" cookie recipe. Once you've had them, you never go back. Once you're known for making them, that's all they ask for. Every party, every event, every holiday - "Please make THOSE cookies" !!! They are addictive. I've managed to scale them down ever so slightly - not too much because the discs are too big for a small cookie. I weigh each dough ball. They're still a shareable size. I buy the discs once a year from Jacques Torres when he does a shipping special - usually before the holidays. I stock up so I can make them year round. Thank goodness for a double oven stove.!!! Love your video.
I just made these and they are by far the yummiest cookies I’ve ever had I still can’t get over how yummy they were !!! THANK YOU FOR THIS I also love your recipes so much I always watch your videos even when im not gonna cook something because it’s just so satisfying
Great instructions! Love the hoody!
Immediately loved the music, nostalgic. I always love the music but this one hit home.
i’m going to make these they look incredible 😍
Going to give this a try! Yum
Anxiously waiting for that sequel to this video! Baked a bunch of cookies after this lol. Love the channel!
Salivating with that mouth cam must be a right pita.... Love the content mano! Great video, and definitely trying this recipe
Looks delicious 😋
Dude. This is why I subscribe to your channel. I learn a lot. So many knowledge bomb. So many juice and meat. Damn. Thanks for the insight man. That crunch at the end seal the deal for me to try this.
Looks good man!
Loved them! I'll admit I melted the butter and added walnut pieces and a quarter cup of ground walnuts. Mom always did that and well...the chocolate chip cookie style everyone likes best is the one their mom made!
Can’t wait to try!!!
I discovered this channel this week & I can’t stop watching your videos!!
Big balls! They look good! I would've never thought of cake and bread flour. Gonna have to give these a try.............
Been learning to cook and bake during quarantine watching youtube videos and a smattering of success has been heavily punctuated with failures. I am a scientist by profession, so following a recipe is actually child's play. I suspect there are a lot of imperfect recipes out there, and yes, Im being quite nice saying that, given the frustration Ive felt from repeatedly bad outcomes with wasted time, energy and money. However, I have to say that this cookie (and his other recipes as well), which I made today, is exactly as it looks in the video, as long as you follow the steps accurately. I have renewed optimism for my amateur culinary future! Thank you!
As soon as I saw the thumbnail picture, I knew it had to be a French recipe. French chocolate chip cookies are out of this world.
Okay, I have tried I don't know how many chocolate chip cookie recipes and this is by far the best, not only in my opinion but my whole family agrees. I am getting ready to make these again. This is the only recipe I use from now on. Thank you!
I went into convulsions just looking at you assemble the ingredients. I can't wait to try this recipe out.
Dude, Thanks for making this as I'm currently in pursuit of the perfect chocolate chip cookie for my kitchen and I'm definitely going to try this. As I think this is the first time I've commented, let me say...first, I love your channel and your videos. It's definitely one of my fav's. Second, I've made your Bolognese sauce and your Philly Cheese steak sandwiches and both have become the way I do these dishes in my kitchen. I'm anxious to try more of your recipes when I have time to experiment. And lastly, the Willie Wonka "pure imagination" music in this video was genius. I absolutely believe in that song, but it also let me know as to what depth of thought you put in these videos. Nice touch to the vid. Thanks for this and all your video efforts and your knowledge your pass on to the rest of us that aspire us to make our kitchens the best they can be. Your truly appreciated...thanks again....Cheers!!
I LOVE baking and making chocolate chip cookies 😊 So glad you decided to incorporate it in your channel! Will you be trying cakes as well?
This is making me want to bake cookies this weekend and use what my grandmother taught me. I was taught to sift the flour. I forgot that always made my cookies soft.
I've been using this recipe as a base for different kinds of cookies. I make a Garbage cookie which has pecans, oatmeal, rice krispies, and coconut in addition to jacques' chocolate discs. Friends and family can't get enough. I also do a pecan chocolate disc, and a macadamia coconut milk chocolate cookie, with jacques' milk chocolate discs. This recipe is so versatile, you're only limited by your imagination. Did I say I make mine 6oz.
I am excited to try
Those look amazing
I'll probably end up making these tonight.
I made a few changes to the recipe, and these are hands down the best cookies I’ve ever made. I love the texture of both flours put together. I’m going to make these for the holidays.
Are you able to state what changes you incorporated?
@@ppw8716 1 1/2 cups of bread flour
1 1/2 cups of cake flour
3/4 teaspoon baking soda
3 teaspoons baking powder
1/2 teaspoon of espresso powder
1/2 teaspoon salt
1/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup of butter or 2 sticks
1/2 cup sugar
1/2 cup light brown sugar
2 teaspoon vanilla extract
2 large eggs
2 cups semi-sweet chocolate chips or 1 cup semi sweet wafers and 1 cup of Reesie cup minis
That looks amazing. Man, when i saw the finish product, my stomach immediately grumble and for real, nearly bite my phone. Haha. Will give this a recipe a try.
I have used brown butter before. The flavour was immense, but I have still to nail a recipe to get where I want it. I don’t have the resources to test a lot so I am excited for your future video that uses it :)
These look awesome. Try browning 2/3 of the butter, it adds a lot of richness and flavor complexity that brings cookies to the next level.
This channel is so underrated.
I'm stoked that you mentioned browning the butter because IMHO that is the difference between a good chocolate chip cookie and a f'n amazing chocolate chip cookie.
Oh my gosh. Yes please.
"It's taken me about three months to get cake and bread flour"
I know the struggle man
If you want to make your own cake flour at home, it's easy. :D For every one cup of cake flour: Use one cup of all-purpose flour, remove 2 tablespoons of the flour and add in 2 tablespoons of cornstarch and whisk well to combine. It saves money too since you're not purchasing a "specialty flour". The cornstarch makes the flour lighter.
why? is this an american thing I am too european to understand?
@@p337awesome In Canada too. But people hoarded flour so it's difficult to find anything but AP now.
I just got my hands on some yeast, the struggle is real
@@p337awesome the survival mentality from things such as nuclear, zombie things or other crises is more prevalent in american societies so they tend to hoard at an extreme level. They used to before covid. There's ton of videos of crazy people with shelters stocked to the brim with guns and food. I guess it stems from this independent and liberal (selfish) mindset they have. And maybe a bit of holywood.
Just made these tonight. Turned out great I think. I couldn’t find the chocolate disks. But found some chunks that melted better than chips but not as good as disks I think. Either way. Really great. Thanks bro!
Chocolate always light up my day
The chocolate on his arm lol. Love it!
I loved watching this (and love that I learned something new about flour) but my first thought when I heard why you chose the disks vs. classic chocolate chips was, "But I WANT the 'bite of chocolate' that is not 'melted in'." I guess that's one of the fun parts of cooking and baking - you do you!
I haven't watched the scroll in a long time so I loved seeing how long your list of sponsors is getting! Your channel is SO underrated!
I did BOTH! Lol because I agree with you
Steve, I agree it is most important to find a recipe by a master and follow it to the letter before experimenting on your own, otherwise you won't have a standard against which to judge your modifications.
in the uk we call them chocolate buttons and they’re honestly UNDEFEATED in cookies. nice video man
I know this is completely irrelevant to the video, which I watched last night. Loved. But because this is your most recent video I just want you to know that I love cooking homemade. I took it upon myself tonight to just throw something together. Literally from my brain. That's not something I've ever done, but have you to thank for the confidence and push to do so. I am a vegetarian, but wanted something along the lines of chicken alfredo without the meat. I wish I would have found your videos 2 years ago. Thank you, for what you do!
Good job,,, making me hungry for cookies!
that’s dedication, holding a go pro with your mouth? glad i’ve been subbed to you since 5k
Well, I did make these and they are really good! Had to order the chocolate discs, and used pastry flour instead of cake flour because it's nonexistent it seems. They are awesome once cooled a bit and still gooey inside. Also, not baking all the balls and keep some wrapped in the fridge so you can have a warm fresh one when ever! I froze some too.....
This is the only cc recipe needed- it’s beyond delicious
Levain can’t touch this
Oh my goodness I want like 12 of those right now!!
Thank you! I Appreciate your channel.
Could you please do a cannoli recipe/show? I love cannolis and I’m going to attempt them today. I like the style in which you do your channel so, it’s fun to learn from you. Grateful
definitely another recipe i will try soon thanks for the great video. I wont need to bake so many cookies at once either. I know you said fridge but can I freeze the batter and bake at another time?
I'm the cookie monster of the family.. each person has their fave sweet treat, be it chocolate, cake, candy but mine are cookies and one of my favorite cookies is choc chip cookies.. I've watched a bunch of recipes and have a list to try but these look fantastic... absolutely amazing... also, I think the universe is giving me a sign as I see you uploaded this on my birthday 2 years back so, this is probably the one I should try first... LOL.. keep up the great work - love your channel
Dang bro how you not have the number 1 cooking channel on RUclips yet? Rooting for ya!
Followed all the directions on these, except, I used piloncillos in lieu of brown sugar. I had to hammer those darn things down and then grind them, lolol! Hoping they will turn out good, as I promised I would make holiday cookies for the front office of my apartment complex since they do so much for us residents 😊 just want to say, thank you for your awesome recipes/guidance, I love to cook/ working with my hands and I love when others enjoy my cooking 🤗
I want to try this recipe but with brown butter, hope it will come out good
I’m not a baker either, but I’m gonna make these as soon as I can get the flour!
I needed this, I finally got disillusioned with those frozen cookie doughs, they are too sweet for me. I’m going to try these.
I’ve Ben making these for years, you can freeze the cookie balls and cook them as you want straight from the freezer
good stuff dude. Found the flour on amazon
I’m going to try these and give them away for Christmas
Man and I thought Food Wishes and Chef Buck rocked
Keep it up N.A.C.S!!
And Thank-you for doing what you do!!
Yep ! This guy is fcking great !
Kenji Lopez-Alt is also good
Made ‘em❣️ Were soooo yummy💫Textures were indeed luxurious! I did reduced the sugar, so they came out a tiiiiny bit puffier than needed - I’m assuming I should reduce the baking powder and soda, since it doesn’t have to fight the weight of as much sugar??
A new viewer here of your videos. They all look delish! Do you eat what you make? I know I would!
Knowing when to pull out is key.
When I can find those flours I definitely want to try these! Unrelated, with summer fast approaching do you have a good lemon granita recipe? Would love to try replicate the ones had in the hills behind Amalfi.
Oh wow! Off to the kitchen I go! Stay safe.
i feel like i found the jackpot with this channel
Please try alvin zhou’s 48 hour cookies!!! He used a different technique - browned butter + added toffee and espresso and chopped chocolate.
....bet you can't eat just one! Great recipe! Thank you!
Throw in a tbsp of corn starch and replace 1/4 cup of the sugar with maple syrup. Cookies stay moist and chewy. Also if you're like me and you don't want crispy bottoms, bake on a silpat. They're cheap and last until you do something really dumb to them.
Cookies are my favorite dessert to eat. Ever.
Enjoy your channel so much.
That’s funny I too have looked to perfect a chocolate chip cookie during this pandemic. I used the recipe from bon apetit. Your recipe is pretty much the same lol. Nice lofi cookie vibes~
