    Asparagus Pasta Salad is a refreshing and healthy alternative to traditional salads. The combination of tender pasta and crunchy asparagus makes for a light and flavorful meal.
    𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬 (6 servings):
    ▫️ 𝐒𝐚𝐥𝐚𝐝:⁣
    🥄 Green asparagus - 500 g
    🥄 Small pasta (e.g., mini penne rigate, mezzi rigatoni, etc.) - 200 g*
    🥄 Red bell pepper - 1 piece (about 100 g)
    🥄 Small tomatoes - 150 g
    🥄 Basil - 20 g (about 5 sprigs)
    🥄 Olive oil - 1 tbsp (15 ml) for sautéing the asparagus
    ▫️ 𝐃𝐫𝐞𝐬𝐬𝐢𝐧𝐠:
    🥄 Honey - 2 tbsp (30 ml)
    🥄 Mustard - 1 tbsp (15 ml)
    🥄 Olive oil - 3 tbsp (45 ml)
    🥄 Freshly ground pepper - 4 pinches
    🥄 Salt - about 1/4 - 1/2 tsp
    🥄 Sweet paprika powder - 1/2 tsp
    🥄 Pine nuts - 50 g
    🥄 Feta cheese - 70 g
    Optional: Parmesan
    *For 2 liters of water, use 20 g of salt for 200 g of pasta.

    🗒️ 𝐑𝐞𝐜𝐢𝐩𝐞:
    ✔️ (1) Bring a large pot with 2 liters of water to a boil and add 2 teaspoons of salt.
    ✔️ (2) Add the pasta to the boiling water and cook it al dente according to the instructions on the package. Stir occasionally. Then drain the pasta in a colander and rinse it briefly with cold water.
    ✔️ (3) Prepare the green asparagus by removing the woody ends. Hold the asparagus firmly with both hands and snap off the tender part from the tough part.
    ✔️ (4) Cut off the asparagus tips and slice the asparagus stalks into approximately 1 cm thick pieces. Set them aside.
    ✔️ (5) Thoroughly wash the bell pepper, halve it, and remove the core. Cut the bell pepper into long strips and then into small cubes.
    ✔️ (6) Halve the tomatoes, remove the stem, and also cut them into small cubes.
    ✔️ (7) Pluck some basil leaves and finely chop them.
    ✔️ (8) Next, heat the olive oil in a pan over high heat.
    ✔️ (9) Add the prepared asparagus to the pan and sauté it for about 4-5 minutes until it becomes slightly browned and tender. Stir occasionally to ensure even cooking.
    ✔️ (10) Add the minced garlic to the sautéed asparagus and cook for an additional minute. Then remove the pan from the heat and let the asparagus cool.
    ✔️ (11) While the asparagus is cooling, prepare the dressing: In a small bowl, mix honey, mustard, and the juice of a lemon. Stir well.
    ✔️ (12) Gradually add olive oil while stirring continuously to obtain a homogeneous mixture.
    ✔️ (13) Pour the dressing over the pasta. Add pepper, salt, and paprika powder. Mix everything well to evenly coat the pasta with the dressing and spices.
    ✔️ (14) Add the cooled asparagus, diced bell pepper, diced tomatoes, and chopped basil leaves to the pasta. Gently toss everything to combine the ingredients.
    ✔️ (15) Add toasted pine nuts and crumbled feta cheese just before serving to prevent them from becoming soggy. Adjust the seasoning of the salad.
    ✔️ (16) If desired, garnish the salad with some grated Parmesan or arugula to add extra flavor and freshness.

    ℹ️ To peel asparagus or not?
    ▫️ White asparagus: White asparagus has a thicker and fibrous skin compared to green asparagus. Therefore, it is common to peel white asparagus before cooking to ensure a tender texture. The skin can remain tough and affect the eating experience. Start at the top of the head and peel the asparagus downwards towards the bottom end.
    ▫️ Green asparagus: Green asparagus has a thinner and more delicate skin compared to white asparagus. In many cases, it is not necessary to peel green asparagus. You can simply trim the lower ends to remove the woody parts. The skin of green asparagus is thin and pleasant to eat.
