Beef, eggplant. tomato dish. Called Badinjon.

Badenjan
1 pound ground beef or less- make
patty’s very thin
1 small onion
2 medium eggplant
3 round tomatoes
Peel eggplant in stripes (peel skin & remove skin to where u have a row of every other. so u have stripes of skin. Ex: no skin. skin. no skin.skin
Slice eggplants round
Salt them, lay out on towel & wait
1/2 hour
Broil ‘til browned and let cool
(You can fry with olive oil if you
prefer) til brown on each side. Do not have to cook them all the way.
Mix together..
-Ground meat
-Shredded onion
-Salt
-Pepper
Bharat and or Cumin. * Optional
Slice tomatoes round
Small hand full chop parsley *Optional
Arrange eggplant, tomato, beef patty, all the way around pan.
Sprinkle with baharat & salt & pepper
Mix 1 heaping tablespoon tomato paste in 1 cup hot water. Pour on top, add more water til it covers it.
Cover pot with lid.
Cook until meat is done
Add baharat and salt as needed
Put over cooked rice. 😋
