I am guessing initially both Indian and european sides had arabic and persian mediators. eventually(and usually) europeans would learn the insian languages just like how we do today. Also that soesn't mean that Indians wouldn't learn indian languages (court members, many civil servants and many royal members would try to learn european languages)
