Well. As an avid hiker, I can testify this has not worked for me I have issues with dairy and meat, chicken and pork. And I love all of those. But as I age just does not work. I have no ethical issues with animal products. But I am gradually eating less and less of them. Cannot eat syrups or processed sugars anymore. I can eat fruit. But have to keep my serving size under control. I now use a very rich soy milk in my coffee that has no additives. Either west soy or Eden soy. I make my yogurt from that as well and just add a little vanilla. I can do honey in small amounts. But that’s pretty much it
I definitely feel the pain of having to cut things you love from your diet. What's commendable is how you listen to your body and have made resourceful adjustments - like making your own soy yogurt! Desire and ethics and taste must stand down to the needs and constraints of the body. Good to hear you're an avid hiker!
I have gotten totally off track with my exercise and really need to get back into the habit of walking

Plus - even with hiking in the cold, there are still things my body says no to. Dairy just seems to be tolerated if my metabolism is revved up enough.
