I know you are absolutely right. About the carbs and sugar. I don’t have trouble with my weight. I am five foot three and right now since got all my teeth pulled 108. But my cholesterol was elevated the last time it was ,checked. It was not at point where I needed medication. The doctor wanted to control with changes to my diet. Along with more physical activity. By the way I will be 52 in January. My cholesterol had dropped after three months on low carb diet. With exercise but the one thing I can’t give up. Is my regular Coke my husband and I don’t have much money. But the pop is staying if I ever have to switch to diet. Already have it all picked out Diet Cherry Coke or Diet Dr. Pepper. The low carb diet definitely is way to lower your cholesterol. If you are someone like me. It worked at it actually has not been bad.
did you know that if you freeze your bread it will change the starch molecules to what is called resistant starch. ?? What that means is that when you eat bread the starch get's broken down and turned into sugar really fast and you get a huge spike in insulin, Where as after you freeze the bread now the starch is changed and it does not want to be digested by the small intestine, so it makes it all the way to the large intestine where the bacteria have to break it down, and they take their time doing it, so its almost like a time release now, it takes a long time for the bacteria to break that down and turn it to sugar so you get this very slow release of sugar into your system and no spike in blood sugar or insulin. and the bacteria keep about 25% of it for them selves because it takes a lot of energy for them to break it down so they use about a 1/4th of it just to feed themselves so they have enough energy to do the job. I couldn't believe it when I learned that because I love bread, now I can eat bread and I am still losing weight and it's a beautiful thing let me tell you.

I am a diabetic taking insulin with a rare form of diabetes . Highs and lows are swinging from one extreme to another. Been years now and not really any improvement. So just freeze the loaf and after it thaws it will change the starch molecules? Thanks for your input.
there is an added bonus to that as well, after freezing when ready to make a sandwich or something if you toast it you make the starch in it even more resistant. I personally have low blood sugar and I am tired of crashing all the time and having to find a store or something to get something in me to bring my blood sugar back up, So eating bread that has been frozen and letting that glucose be released into me slower during the day I no longer have crashes. I can eat a sausage, egg and cheese sandwich in the morning and not have to eat for another 12 hours. So for me it's great having that slow release of sugar into my system . I'm in Salt Lake City, and you are right everything is made of sugar because sugar is addicting. the more we become addicted to food the more we have to see the doctor and the more pills we have to be on when we get older. it's all about profit for Farma and the food manufactures.
