Don't know about kolkata but in delhi, mayo is usually a staple and works really well too instead of the mint chutney. Kathi rolls were my go-to breakfast and lunch for months during college. Good times.
Found this channel and thought it was another generic pretentious foodie RUclipsr. Oh how wrong I was. The way you make these seemingly difficult recipes so simple that anyone who wants to can make them is incredible. The diversity of food and the credit of where they came from is awesome too. My family and I don’t have a ton in common outside of our enjoyment of trying different things. Made the Halal Guys chicken and rice and it was an absolute hit. This will be the next one I make when we are all together. Keep killing it, Ethan!

I liked the little bit where you mention that you clean the bowl and cutting board while the food is in the oven. As someone who often makes huge messes while cooking, I would love more bits like that. Finding out when to clean everything else up is arguably part of the technique!
“Clean as you go” is something I follow thanks to Gordon Ramsay. I used to have the same issue, and by the end of a cooking storm, I have a battlefield of cookware to take care of. But this! This has helped me immensely to the point where it feels like a job well done when leaving the kitchen. Feels effortless.
Made this for the family tonight. Never made or even seen paratha before. Four of us raved about how good it was, and we aren't a family of ravers. My 11yo vegetarian loved the egg version. i have lived in kolkata for more than 16+ years and i can definitely say that kolkatan cuisine is incomplete without rolls, and your technique to wrap them rolls is absolutely original and a wonderful nudge to the street food of kolkata
Well, i just tried this and it really tasted amazing. I cooked all the chicken and my family just "tasted" one piece of chicken. The result, i just ate two rolls, and they ate all the remaining chicken, just by itself lol. Good content as always Ethan, it's really precise, short and a real good authentic recipe.

Your fondness for lesser known subcontinent dishes brings me great joy. In Pakistan we call these roll parathas, and we often add garlic mayo. It tastes dope.
Kolkata Kathi Rolls have a cousin in Delhi too. Difference being the addition of a mayo based sauce or using a chicken dish with a thick creamy gravy, a perfect amount of sauce is used, not too much and not too little, it makes or breaks the rolls . If you like your Chicken creamy then Delhi Kathi rolls are also worth a try. I genuinely appreciate your inquisitive nature and interest in Indian food, the most underrated cuisine of all time!

Just made this for dinner and adding it to my repertoire. Definitely encourage marinating for a few hours since the assembly and chopping takes a long time when you're hungry. I also modified this by serving it pizza-style on a garlic naan (the closest bread substitute I could find).

If I wanted to get specific, I would use the region names like 'Punjabi' since that has far more meaning in the context of cuisine than Indian vs Pakistani. Personally, I would say the differences within the Indian subcontinent is actually less than the differences within the Mediterranean. I don't consider Italian and Greek food to even be remotely similar.

Made this today, the parathas are outstanding on their own and the Kathi rolls are to die for. Frankly, the marinated chicken I could eat by the fistful on its own. The chutney was maybe a little hot for my tastes but definitely didn't put me off. I will use a couple fewer chillies next time. And there will definitely be a next time. Thanks for showcasing such approachable recipes. I have made a few of your recipes now and none of them have disappointed.

There's also great mutton versions of these amazing rolls. Every time I'm up till 3 working, this is my go to meal. And not just for me, also for the odd 200 million Indians who do eat non veg. And for those 1 billion who don't, there are no egg paneer and masala potato preperation for these. In the street food format, it probably takes less than 90 seconds for the guy to cook and assemble. It feels amazing to see someone finally cover these. Hats off Ethan. Respect++

Hey Ethan - very well done. Try adding some chaat masala and some ground cumin powder on top of the chicken and the chutney while assembling into the parantha. That will be a gamechanger in terms of the taste! Also, for the chutney, add some greek yogurt and you'll now have a more creamy chutney as opposed to a runny one.
I made it with a quality half-bread. Substituted a couple of ingredients out of necessity, I can tell this much: Fricking Delicious. Added Italian Radish instead of pickled onions and well, wasn't that telling! Kudos Ethan!
This looks great! The egg version is reminiscent of a very similar breakfast served in Uganda & Kenya. In Uganda it's known as a rolex (rolled eggs - get it?) and in Kenya chapati mayai (chapati and eggs). These are made using East African chapatis, a derivative of the Indian version that is more similar to paratha. You can find these as a street/roadside snack for next to nothing, usually served with tea. When cooking these myself, I mix the eggs with a pre-made paste of onions, red peppers, and chilli peppers. It's my favourite breakfast makes me miss Kenya!

When I got to college, or maybe after college because I wasn't exactly going to dinner parties at that point, I was always confused when an American friend said that what they were cooking was being served with chutney but then they served something that seemed essentially like salsa or relish. This all has been much more my speed.
Ahhh how I miss these from home (as an Indian student in the UK)😢. PS There are a ton of amazing variations to try!(Try to use the egg roll with all of them!) 1. Mutton shami or seekh kebabs instead of classic chicken 2.Use soya chaap or paneer Tikka for a banging pure veg version. (Hit us up with your Soya chaap recipe Ethan!) 3. Finally , replace the classic chicken with a cream marinade (Malai chicken Tikka ) for a luxuriously smooth wrap with green chutney and chili chutney!!!!
My first time in Pakistan, I was 7, my uncle took me to the local bazaar and I had this for breakfast. I shat my pants for a week. My mum was furious, my dad agreed it was necessary to help me acclimatise. I didn’t get sick for the rest of the trip. Now, every time I travel somewhere exotic, I find the nastiest street food on day one, stock up on Imodium and pay my penance for being a weak stomached limey, and toughen it up so I can eat what I want for the rest of my journey. I got a mortar and pestle as an early Xmas gift and thought I would use this as my inaugural recipe with it. Oh. My. God. are these good. I messed up the parathas a little bit--misread the instructions and didn't do the third 15 minute rest after coiling them, which would have saved me a lot of stress and elbow grease trying to roll them to 8 inches diameter, but they still turned out pretty flaky and delicious. Also I wouldn't suggest being as ambitious as I was and making the parathas the same day as everything else. It was exhausting. Holy crap was it delicious though. Unfortunately I have an intense dislike of both mint and cilantro so I skipped that but whipped up a mango chutney instead, added the requisite pickled onions and it was divine.
As someone who has eaten this many time and many different versions of it, I'm very happy to see this recipe on your channel. A tip: throw in some sour curd in the chutney and go for the sour-spicy taste; It'll be more thick, will have an acidic-type blast and leave you speechless for sure :3

I used to dislike chicken thighs because i found them 'slimy' but i think they are quite forgiving now and i love cutting them like you do and put them in oven, i love mixing them with a little bit of oil, garlic, sambal oelek, onion powder, cumin, paprika, salt and pepper. Cook them until both sides are crispy.
Just made these and holy cow! I can hardly believe how good they were! Family not so happy I forgot to open a few windows, but just WOW! Gonna try this on the bbq next summer by skewering the chicken.

This looks great! The egg version is reminiscent of a very similar breakfast served in Uganda & Kenya. In Uganda it's known as a rolex (rolled eggs - get it?) and in Kenya chapati mayai (chapati and eggs). These are made using East African chapatis, a derivative of the Indian version that is more similar to paratha. You can find these as a street/roadside snack for next to nothing, usually served with tea. When cooking these myself, I mix the eggs with a pre-made paste of onions, red peppers, and chilli peppers. It's my favourite breakfast makes me miss Kenya!

When I got to college, or maybe after college because I wasn't exactly going to dinner parties at that point, I was always confused when an American friend said that what they were cooking was being served with chutney but then they served something that seemed essentially like salsa or relish. This all has been much more my speed.

There are a ton of amazing variations to try!(Try to use the egg roll with all of them!)
1. Mutton shami or seekh kebabs instead of classic chicken
2.Use soya chaap or paneer Tikka for a banging pure veg version. (Hit us up with your Soya chaap recipe Ethan!)
3. Finally , replace the classic chicken with a cream marinade (Malai chicken Tikka ) for a luxuriously smooth wrap with green chutney and chili chutney!!!!
My first time in Pakistan, I was 7, my uncle took me to the local bazaar and I had this for breakfast. I shat my pants for a week. My mum was furious, my dad agreed it was necessary to help me acclimatise. I didn’t get sick for the rest of the trip. Now, every time I travel somewhere exotic, I find the nastiest street food on day one, stock up on Imodium and pay my penance for being a weak stomached limey, and toughen it up so I can eat what I want for the rest of my journey. I got a mortar and pestle as an early Xmas gift and thought I would use this as my inaugural recipe with it. Oh. My. God. are these good.
I messed up the parathas a little bit--misread the instructions and didn't do the third 15 minute rest after coiling them, which would have saved me a lot of stress and elbow grease trying to roll them to 8 inches diameter, but they still turned out pretty flaky and delicious. Also I wouldn't suggest being as ambitious as I was and making the parathas the same day as everything else. It was exhausting. Holy crap was it delicious though.
Unfortunately I have an intense dislike of both mint and cilantro so I skipped that but whipped up a mango chutney instead, added the requisite pickled onions and it was divine.
As someone who has eaten this many time and many different versions of it, I'm very happy to see this recipe on your channel. A tip: throw in some sour curd in the chutney and go for the sour-spicy taste; It'll be more thick, will have an acidic-type blast and leave you speechless for sure :3

I used to dislike chicken thighs because i found them 'slimy' but i think they are quite forgiving now and i love cutting them like you do and put them in oven, i love mixing them with a little bit of oil, garlic, sambal oelek, onion powder, cumin, paprika, salt and pepper. Cook them until both sides are crispy.
How have I never heard of these before? It's like an Indian souvlaki. What's not to love!
