It was really touch for these pilots in ww2 especially when it came to high altitude dog fights plus the bullets had super bullet drop and it was hard to aim at such speeds they would have to shoot before the airplane came in the gun sights man time their shots I remember playing war thunder on my ps4 2 years ago most realistic as it gets game I've played till date crazy bullet fx and drop and impact now I realised how tough it was for ww2 fighter pilot's scary too getting bullets in your cockpit
The spitfire was like a delicate Swiss watch ,that you wore like a suit, That had to take a hammering , Indeed have always wondered what the mechanic had to deal With back in the day
The reason for all the fiddly work on the top side of the guns is to do with the way they work. Those guns work from what is called an 'open bolt' like most every other modern machine gun. This means before the gun can be fired the bolt must be pulled back and a round placed in front of it, as you see when the belt is pulled out. When the gun is triggered the bolt is released and pushed forward by a great big spring. As it travels forward the bolt picks up the round out of the belt, seats the round in the breach of the gun and hits the round's primer with the firing pin all in rapid succession. The round goes bang, the bullet goes forward and the bolt goes back, resetting the mechanism for the next round to be fired. Once you get the hang of all the movements and procedures this can be done in a few seconds; though it might take a little longer with the gun nested in a plane's wing but I've never tried doing it there.

Rearming the machine guns seems like it would actually be easier irl than in the game. Only thing would be the tedium of all those screws.
