    DIY YEAST-FREE AVOCADO YOGURT BAGELS
    INGREDIENTS (Makes 8 Bagels)
    1 Ripe Avocado
    1 Cup/250 Grams Plain Yogurt at room temperature
    1 Egg at room temperature
    1/2 Teaspoon Salt
    1/2 Teaspoon Garlic Powder
    1 Teaspoon Baking Powder
    2 1/4 Cups/270 Grams All Purpose Flour
    1 Egg & 1 Tablespoon Water For Egg Wash
    Grated Gouda Cheese (or your favorite cheese)
    DIRECTIONS: Peel and mash the avocado until smooth. Add the yogurt, 1 egg, salt, garlic powder, baking powder. Mix Well. Sift in 1/2 cup/60 grams flour at a time, until all the flour is used, mixing after each addition of flour. Once the dough starts to get firm, use hands to finish combining, and form a ball. Flatten the dough a bit, and cut it into 8 even parts. Dust 1 piece with a bit of flour. Fold dough into itself a few times, then roll into a ball. Flour your thumb and poke a hole through the center of the ball. Manipulate it to make the hole bigger and shape the bagel. Place the bagel in a greased dish. Repeat the process for the other pieces. Pry the holes open more if necessary. Cover with a dishcloth and allow to rest for 1/2 hr. Preheat oven to 350F/175C. Bring a pot with lightly salted water to a boil. Bathe the bagels for on minute on each side (not longer!), then drain well and place onto a baking sheet, lined with baking paper. Beat 1 egg with 1 tablespoon water to make the egg wash. Brush egg wash generously onto tops and sides. Top the bagels with grated gouda cheese (or your favorite cheese) pressing gently. Bake for 20 minutes. Keep an eye on them as oven temperatures may vary. Allow bagels to cool after baking. The bagels are best served toasted. Top with your favorite topping(s) as desired. To maintain freshness over a period of time, slice the bagels, separate each bagel with baking paper, and store in a freezer storage bag. They can be defrosted at room temperature or toasted directly from the freezer. Enjoy!
