That's the beauty of how these games were made. You can find your comfort zone and stick with it. But, as you found out, they also provide the option to experiment and step outside the box. I know with Elden Ring, I have various builds: quality/strength build, dex build (my samurai which was probably my favorite one to use) as well as a one-shot-mage build. Each were fun to do, and each had different ways of defeating the bosses. The replayability of Elden Ring is what I love so much. I'm currently using my quality build in the DLC. Next, I'll try my mage, and then my samurai. My problem with the samurai is I already started it in NG+ mode, so that will be challenging as well.
I always say, variety is the essence of fun in life. ER is the only souls game I have played and I cannot get enough of it. The only reason I went for 5 ng+ in base game was to get more tears for respec and try new things. ng+ on DLC too now with new build.
Light roll smith script cirque is amazingly fun in pvp and pve. My 200 build with maximum damage on a cold cirque was 60 vigor 30 endurance 52 str 54 dex 52 int.
You were a faithful sword and board plus bonk connoisseur through and through. Nothing wrong with that. Me, I was all about painting red. Then I discovered Blasphemous Blade. :p

Always been about trying to find all the tools that can make my characters better. So buffs, trying different builds has always been my thing in RPG's. Kinda shocked that you as a huge Souls fan played so vanilla lol. Oh and also Elden Ring is rhe GOAT!
Don't know if anyone will read this, but don't be afraid to use larval tears for respeccing stats. You can get 20 or more with each playthrough including DLC. Try something new, exoeriment, fail, and find out what works for you. Im currently on the last boss too, and damn.. I need to do something different as well.. I'll definitely do it tho! I've been like four hits and a bleed proc away multiple times now 😅
I don't think you're boring for using the strength build, whatever works for you, but sometimes you have to change it to adapt to it certain situations!😮😊
I'm doing the DLC a second time with my sorceror build because the amount of variety the weapons give you. I'm loving the Star Lined Blade and Milady Sword combo. I think thats what I love about these games are the build options.
I also used to only use strength/dex builds in all of my souls experiences but when elden ring dropped I had to think outside of my usual box and actually experiment with different weapons, builds and ashes of war, the difficulty was a huge factor in that.
for me it was probably ds 2 that made me really experiment and try new shit in pvp. from there i started replaying all the souls games a ton just trying every weapon i thought was remotely interesting. in ER im generally upgrading 6-10 weapons at the same time just to cover all my bases at least in online play. ironically me trying out new shit is probably why i havent beat consort radahn yet lol. i got to him then got bored and started a new character for the dlc and then again and again. right now ive been playing around with fire giant incantations and combining that with flame spear on my queelign rapier/great katana.
I don't know if it's intentional or not but the souls games push each other, when I played Bloodborne I finished everything but still wanted more , so I bought ds1/2/3 and elden ring when it released. I even think that the elden ring dlc will cause the next game of the year award show to put a dlc section.
I started like you with shield and big sword, that until bosses and enemy depleted my stamina no matter what shield I used, first time I really struggled with this build was in ds2 last sinner or something (boss), think he was patched later. Now days I always play soulslike games multiple times with different builds, it is really fun.
I have 2k hours in elden ring. I honestly am not impressed with the dlc. I dont mean the creative aspect that is flawless as usual. But again 2k hours in this game and still a month later fighting the dlc bosses doesn't feel fun. It feels like fighting malenia over and over just with a different move set. Once more 2k hours in elden ring alone less yet the other soulsborne series, to have to respec to beat radahn? He is so hard I had to cheese him? I'm kind of done with elden ring. I can't wait for Black Myth: Wukong.
