I found this video on RUclips, printed off the recipe, and added strawberries. Well, I just served it up with ice cream on the side and boy oh boy was it delicious!!! My husband loved it and I feel like a real baker now! Thanks for posting. I'll be making this many more times! A+ recipe!!!
My friend has a rhubarb plant and offered to share some stalks. I never made a rhubarb pie. This was the first video that popped up and so I watched it and followed the directions. The end result was a deliciously balanced sweet and tart rhubarb pie! It was so good I cut a piece to share with my neighbor. Thank you for sharing this recipe. Grandma used to sneak a pack of strawberry jello powder into her rhubarb recipes to enhance color and add that sweet strawberry flavor! (Don’t tell anybody!)

I grew up in Nebraska, lived in San Francisco 25 years and now in Sacramento. Tried Several varieties in the garden here but no luck (couldn’t kill it in Midwest). Til couple years ago a friend gave me and several other friends a hunk from her backyard. Growing great in a large container and get several harvests per year. My family doesn’t eat it so I tear off a couple stalks from time to time and boil it in a bit of water with sweetener for a personal batch of pancake, ice cream or scone jammy sauce. I never knew you could eat it green before. Tomorrow morning, I’m making this first batch of 2020 with some Fuju persimmon so the bright red rhubarb with bright orange persimmon should be gorgeous as well as delicious. Might even put singed tiny twig of rosemary or sage with orange peel or pistachios as garnish. Thanks for reminding everyone about the one dish no roll pie crust recipe!!!!
I have made pies with this crust but I use a different type of rhubarb callec " strawberry rhubarb" which has stalks that are red toward the bottom. It makes a beautiful red juice in the pie. I love rhubarb!

Just a reminder to those who aren't familiar to harvesting rhubarb, don't forget to snap the stalks off at the base versus cutting them and also remember the leaves are poisonous and shouldn't be eaten. Thanks for a fun spin! When I was 10, my Montana grandmother showed me how to make her rhubarb filling (I'd loved the pie). All she did was put sliced rhbarb and sugar in a pot and simmer...BOOM! I was astounded. "No water?" I inquired. She told me that there was no need...I think it was baked in a pre-baked crust (at least partway). I'll be trying it this weekend!
My sister just gave me some of her rhubarb plant which was originally from my mom's plant and she got hers from her mom; so this plant is over 100 yrs old now. So yummy and so glad we can keep sharing this wonderful plant called rhubarb!

Well, my first attempt is in the oven as we speak... I did one according to this recipe and for one other I added one cup of strawberry jam to the filling. I also use cornstarch instead of flour, about half as much, I like the texture it gives a little better. Looking forward to trying it :-) thanks for posting this video!
I've been around Rubarb all my life. My grandparents had a farm that had a mixed orchard and they grew fresh veges and fruit. They had a roadside farm stand for as long as I can remember. They had about sixty foot of rubarb and grandpa give me the job of taking care of the strawberries, peppers and rubarb. He taught me to pick only the outside leaves and to keep the seed shoots picked off of it so it would keep grow till frost. That row has really grown in height because of putting new layers of manure on it every fall. The recipe that your guest used is much like grandma used. She also put rubarb with cherries for pies to stretch the cherries.
I feel really lucky that I have huge rhubarb plants. I guess I never realized it was not readily found everywhere. I'm in Maine. It grows really well here. Looking forward to trying this recipe cause I'm not much into cooking but this is so easy. And looks great! Thanks. 😊
This is the best treat I put half a jar of strawberry jam and half the sugar and more crumble and it is the surprise everybody likes . It is what had with meats and snacks after school . An awesome treat cook first and sugar while warm to sweeten ..... we canned like peaches.... it make a beautiful aquarium too enjoy

I love rhubarb pie or cobbler or crisp. We have tried growing rhubarb in our area of southern Indiana without success. Northern Indianan where I grew up, we had it all the time with no trouble. We have a hard time finding it in stores here as no one seems to know what to do with it. We always heard the older folks talk about mixing strawberries with it.
I have only seen red rhubarb stalks. Unfortunately I don't have a plant yet, so I purchase at the store. My Nana's recipe calls for minute tapioca for the thickening agent. I am going to try the egg version next week. I also mix strawberry and/or granny smith apples. Thank you for doing this.

Every time I make rhubarb pie I think of my grandma and staying on the family farm. She made the best rhubarb pie. Be sure to put a pan under the pie in the oven because it drips. The first time I made it, as a young cook, it dripped a lot because I put too much filling in the pie, and caught the oven on fire.
Yunny I make almost the same pie. If you boil the leaves 10 minutes. Cool mix 4 cups with 3 drops of Dawn dish soap(the blue one). Put in spray bottle spray on veggies for no bugs eating the plants!

For friends who gave me some rhubarb from their allotment and some who gave me some cooking apples and I combined the two fillings. I was going to make this, but after chopping my rhubarb, I only had about 2 1/2 cups. I added a few strawberries just to use them up. I cut your crust measurements in half and pressed it into a shallow tart pan, instead of the pie plate. It was a metal pan with removable bottom. I also used corn starch in the rhubarb instead of flour. My batch of rhubarb was the very pink variety. With the strawberry, it was pretty as is, and didn't really need the top crust. But I love streusel topping, so I mixed some up with brown sugar, a little flour and butter. Sometimes, Necessity is the Mother of Invention. Hope it turns out, OK! *UPDATE* Turned out great! Next time, I am going to use melted butter in the crust instead of oil, as someone in the comments suggested. This is a "keeper" recipe --thanks much!
Rhubarb is so good, it's like a tart stringy strawberry. I made some just normally(just in a pot with sugar and water, not pie) from some rhubarb in my yard and I was blown away. It was better than any other syrup, jam or any sweet topping I've ever had. Really. Try it on vanilla ice cream. Can't believe this was in my yard and I didn't even know about it.

I clicked on this because making a rhubarb pie is on my list for this summer, however it is not easy to find rhubarb here in Florida. Ordered root stock and tried to grow it here once but it didn't take. I prefer it without strawberries. Have added lemonade powder and lemon zest to it before which I think is a nice complementary flavor. Will try this recipe with the egg and easy pie crust, if I can locate some rhubarb.
We live near Saskatoon Saskatchewan and have rhubarb plants. My main plant has red stock so makes a more reddish dessert. Very pretty. My second plant is only a year old but is a low sugar rhubarb and also very reddish in color.

Love this recipe, the ‘crust’ is so simple. I’ve been eating rhubarb cooked in many ways for over 70 years. Been growing it for about 60 years here in the Sydney area in Australia. Rhubarb is RED! I’ve never grown green rhubarb, not even the ones I grew from seed about 15 years ago. We recently moved into a retirement community, and I divided a crown to transplant here, but three months isn’t long enough to get a crop. Our son brought us some ‘supermarket’ rhubarb because we had none. It was GREEN! and I could hardly bring myself to cook it, but I added a few drops of red food colouring and was able to believe it was rhubarb. It tasted ‘normal’, at least. I always put the leaves in the worm farm - the worms love ‘em.
Sparked my enthusiasm to go to garden. I used vanilla cinnamon and rum flavors and tapioca flour instead of egg and a frozen partially thawed pack of Marian berries Also only 1/3 c of veg. Oil. My sweetie is trading me with organic vanilla ice cream
If your rhubarb is green add a couple of drops of red food coloring. It gives the pie a rosy color. The rhubarb in my Mother's garden was green and she always put a few drops of coloring in her pie. Give it a try!

We grow and eat a lot of rhubarb in England and one of the staples to go with rhubarb is stem ginger finely chopped and also the ginger syrup.

I feel really lucky that I have huge rhubarb plants. I guess I never realized it was not readily found everywhere. I'm in Maine. It grows really well here. Looking forward to trying this recipe cause I'm not much into cooking but this is so easy. And looks great! Thanks. 😊
This is the best treat I put half a jar of strawberry jam and half the sugar and more crumble and it is the surprise everybody likes . It is what had with meats and snacks after school . An awesome treat cook first and sugar while warm to sweeten ..... we canned like peaches.... it make a beautiful aquarium too enjoy

A favourite sweet (candy) with kids in the U.K. is rhubarb and custard, it’s based on a pudding that’s simply stewed rhubarb served with English custard or as the French call it sauce anglais. Very very popular is rhubarb crumble with cream a ubiquitous pub grub pudding. Rhubarb has oxalic acid in it, high fibre and is thus a laxative, there’s part of England known as the rhubarb triangle around Wakefield in Yorkshire where it’s almost an exclusive crop. We can even get the fruit frozen and ready prepped in some supermarkets. It’s an irresistible flavour mixed with ice cream, and try a little vanilla in it . I am going to try the pie, simple to make and share.
first time i ever bought rhubarb, and tried your pie, i didn't have enough so i added one sour apple cut into cubes (3 cups rhubarb 1 cup apple) and it came out delicious! thank you for sharing the recipe.

I love, love, love rhubarb. One of my favourite things. I love rhubarb jam and jelly, rhubarb pie, strawberry rhubarb pie. Rhubarb sauce. And I love it raw with salt. Yummy. Going to give this pie a try. I need to get out and pick some of my rhubarb and give this a go.

I love rhubarb pie or cobbler or crisp. We have tried growing rhubarb in our area of southern Indiana without success. Northern Indianan where I grew up, we had it all the time with no trouble. We have a hard time finding it in stores here as no one seems to know what to do with it. We always heard the older folks talk about mixing strawberries with it.
I have only seen red rhubarb stalks. Unfortunately I don't have a plant yet, so I purchase at the store. My Nana's recipe calls for minute tapioca for the thickening agent. I am going to try the egg version next week. I also mix strawberry and/or granny smith apples. Thank you for doing this.

Every time I make rhubarb pie I think of my grandma and staying on the family farm. She made the best rhubarb pie. Be sure to put a pan under the pie in the oven because it drips. The first time I made it, as a young cook, it dripped a lot because I put too much filling in the pie, and caught the oven on fire.
Yunny I make almost the same pie. If you boil the leaves 10 minutes. Cool mix 4 cups with 3 drops of Dawn dish soap(the blue one). Put in spray bottle spray on veggies for no bugs eating the plants!

This pie has turned out DELICIOUS, each and every time I've made it. It's now my go-to recipe! One quick question for you... I've only ever made it with fresh rhubarb... How does it fare with frozen rhubarb? I'm needing to make one this weekend, but wasn't sure how it would turn out with the freshly frozen stuff...
Jane says that it is ok with frozen but she said to add an extra egg to thicken it a bit. Hope that helps Laurie!

For friends who gave me some rhubarb from their allotment and some who gave me some cooking apples and I combined the two fillings. Making one now as it goes for break time at the allotment this afternoon.

I was going to make this, but after chopping my rhubarb, I only had about 2 1/2 cups. I added a few strawberries just to use them up. I cut your crust measurements in half and pressed it into a shallow tart pan, instead of the pie plate. It was a metal pan with removable bottom. I also used corn starch in the rhubarb instead of flour. My batch of rhubarb was the very pink variety. With the strawberry, it was pretty as is, and didn't really need the top crust. But I love streusel topping, so I mixed some up with brown sugar, a little flour and butter. Sometimes, Necessity is the Mother of Invention. Hope it turns out, OK! *UPDATE* Turned out great! Next time, I am going to use melted butter in the crust instead of oil, as someone in the comments suggested. This is a "keeper" recipe --thanks much!

Rhubarb is so good, it's like a tart stringy strawberry. I made some just normally(just in a pot with sugar and water, not pie) from some rhubarb in my yard and I was blown away.
It was better than any other syrup, jam or any sweet topping I've ever had. Really. Try it on vanilla ice cream.

I clicked on this because making a rhubarb pie is on my list for this summer, however it is not easy to find rhubarb here in Florida. Ordered root stock and tried to grow it here once but it didn't take. I prefer it without strawberries. Have added lemonade powder and lemon zest to it before which I think is a nice complementary flavor. Will try this recipe with the egg and easy pie crust, if I can locate some rhubarb.

We live near Saskatoon Saskatchewan and have rhubarb plants. My main plant has red stock so makes a more reddish dessert. Very pretty. My second plant is only a year old but is a low sugar rhubarb and also very reddish in color.

Love this recipe, the ‘crust’ is so simple. I’ve been eating rhubarb cooked in many ways for over 70 years. Been growing it for about 60 years here in the Sydney area in Australia. Rhubarb is RED! I’ve never grown green rhubarb, not even the ones I grew from seed about 15 years ago. We recently moved into a retirement community, and I divided a crown to transplant here, but three months isn’t long enough to get a crop.
Our son brought us some ‘supermarket’ rhubarb because we had none. It was GREEN! and I could hardly bring myself to cook it, but I added a few drops of red food colouring and was able to believe it was rhubarb. It tasted ‘normal’, at least.
I always put the leaves in the worm farm - the worms love ‘em.

Sparked my enthusiasm to go to garden. I used vanilla cinnamon and rum flavors and tapioca flour instead of egg and a frozen partially thawed pack of Marian berries Also only 1/3 c of veg. Oil.

If your rhubarb is green add a couple of drops of red food coloring. It gives the pie a rosy color. The rhubarb in my Mother's garden was green and she always put a few drops of coloring in her pie. Give it a try!
