Diving into Sekiro to get caught up before Elden Ring (hype!) since it's the only From souls game I've never fully played.

tip for the drunkard fight, if you aggro him you can reset by hiding and his reset position will be further from the wall so you can get a free deathblow. Great gameplay so far you've picked up the combat really quickly
