Great quality video! I've seen chicharron de X sold at various markets, tiendas and so on, but never in oil. They're always in a bag, at least here in Northern Mexico. So, why do you store them in oil, wouldn't that reduce the crunchiness? Moreover, how much does the heat level drop during the process, I'd be keen on making some chicharrón de habanero.
@@losamatti yo! Thank you! I tried these about a month ago while visiting Tijuana and they were stored in oil and STILL super crunchy. If you get your fry and texture right, they’ll keep crunchy for a while. The oil just helps preserve them in an oxygen reduced environment. The heat level when fresh on these was INTENSE but like this they lost a lot of heat. Really lovely recipe for real. Let me know how the habanero goes!
