No, sausage only contains meat and fat. Liverwurt however contains skin, liver, rice, some bacon aswell. If you want to eat everything a pig contains, you can eat porkcheese. However i generally dislike that good.
Its either artifical very thin plastic or if its traditional sausage its the pig's intestine. Dont worry tho, they clean it so much. You can eat the intestine aswell.

Nah sausage is usually made from pork meat.
But they are spiced,you cant really feel wheter its made from pork or chicken.
