How many peaches did you clean up? I found the exact same recipe on Pinterest, but it said 6 quarts peaches. I only got about 4 full quarts and a partial one as well. Mostly filling instead of peaches. You got eleven quarts.
The ratio would be 1 tablespoon lemon juice to 1 cup of water! They don't have to stay in the ice bath very long. Just long enough that they cool down and are not continuing to cook!
Question: is it really neccessary to use 7 c of sugar? Edit to add: have you ever steamed canned? Plus i want to tell you how wonderfull to find an Iowa homesteader too.

I think I used somewhere between 32-36 peaches! I believe the total amount needed was 6 quarts peeled and sliced! 😊

I used to boil them... but you are not supposed to do that with the new lids. It can keep your jars from sealing properly. So, now I just wash them.
