Some tips I think might help: I think snow pea is completely useless here: if you sub that column of snow peas for sunflowers, you'll have more sun for instants/spikeweeds. Idk if it was legal, but using imitater to imitate either ice shroom or doom shroom would have been very helpful. As @GodzillaFreak said, some other good plants in endless are fumes, and starfruits (a much worse gloom shroom, but gets the job done againts miners). You can also take more advantage of the pool, to have more stairfruits/sunflowers, since the only threatning zombie there is dolphin rider and it gets countered by tall nut. You can use puff shroom to stall the gargantuars as well. A threepeater torchwood setup might be possible to get far, with threepeater in the 4 central lanes, and fumes in the outer lanes. Don't be afraid to use ice shroom, the fire only thaws the first few zombies, and slows down the horde. Hope you try this again!
While fumes are actually decent, starfruit are just straight up bad against many diggers unless spam the whole map with it, but it would take over fume spot so overall i think that'd take further but it won't be much more than this. I could be wrong tho
A good alternative defense would be using repeater + split pea with torchwood by putting your split peas infront of the torchwoods, this would have more damage and it would make your defense sync better.

i suggest you try laddering with starfruit and fume-shroom, thats the furthest you could probably get with these as your attacking plants thats it, no one plants needed, just keep it up with the instants and ice shrooms (and use imitater ofc) also try the 4 doom-shroom recycling method from the wiki oh and plant them all on flower pots, they hit boxes can be heavily exploitable against gargantuar's attacks

Same, I use melon-pult and starfruit as main attacking plants. I didn't use snow pea because the number of zombies was too much and this isn't worth to use snow pea.

Stratfruit is too weak to deal with 500 zombies
Should probably try stars and fumes
Stars have no splash or AOE so I don't think they'll do as well as melons, but fumes and cattails might help

Imitator puffshrooms, sun shroom, flower pots, scaredyshroom, 4 should be enough to permanently stall one gargantuar, only 2 if slowed (snow)
