I think for the pickles people generally think the dyed ones have "more flavour" since they look like they might be more saturated in the juice, where the dye free ones look like they might be a milder flavour.

As a person who is allergic to synthetic food colorings, and has thus avoided them for most of his life, I can tell you it is definitely possible to taste them in food. I've gotten to the point where I can taste food coloring in things like candy, ice cream, pickles, and more. I think when you aren't exposed to it on a regular basis the flavor becomes a lot more foreign and noticeable.
My fiance is allergic to red 40 and he's the same, can totally taste it
It's the insects they use that you're allergic to. like people who are allergic to chocolate it's actually not the cacao but the cockroach that gets in when they dry it
