I want to see the reverse of this....Babish makes a killer dish, then each of his staff have to find a similar dish from a local restaurant and then the judges blind test them all to see who wins.

I used to work at Wegmans when they still made fresh bagels from scratch in house instead of getting them shipped frozen like they started doing after COVID was at its peak.
Making bagels was my favorite job. We had a giant kettle named Kevin and you'd basically boil and then remove them, season them and then place them upside down on a board that was wet. It was like a wooden board with some sort of cloth on top, I think burlap maybe? You'd then flip them in the oven after a few minutes and let them finish with the bagel facing topping side up. I remember being super proud of the color and texture I'd get compared to when the other breakfast people would make them.
Think I'd make hundreds in a day. I miss those days.

27:27 It’s opioids. Poppyseeds contain a very slight amount of opioids.
Also it is recommended that if you have a drug test coming up, make sure you don’t eat any foods with poppyseed in them for about three days before the test.
I think there's a Seinfeld episode where Elaine experiences this very conundrum.
Mythbusters proved that unless you're guzzling buckets of them it's not going to show up. Not only is the amount miniscule but it's not going to really absorb just from eating them like that.
It does actually show up as opioids in the cheaper tests, we have had it happen, secondary tests will reveal the true situation.
@@maromania7 the cheap tests did pick up the same day double poppyseed bagels, but it was also acknowledged by the called in expert that a first positive would be sent off for a more in depth test (because the second test is a lot less quick and cheap to run)
In the Babish Culinary Universe, you know all participants in a beat off will be left satisfied by the end.

Gravad Lax, Swedish for Cured Salmon or Lox, is a staple here in Scandinavia. Usually with Dill added to the cure.
We also have cold smoked salmon and Hot smoked salmon. All three are ususally eaten during holidays like Christmas.
Don't give the Americans credit in their bastardisation of our foods. It's called Lax, not "Lox."

Grav lax, very different. Just both have the word lax or lox meaning salmon in Germanic. But American Jewish lox tastes nothing like Scandinavian grav lax.

The reason the bagels stuck to the rack is the same reason it didn't brown the bottoms. You need to put them directly on to an oiled (flat!!!) baking sheet which will allow the to brown and come off of the sheet themselves.

Hey Babish! I doubt you'll read this, but I make bagel often at home. to get the bottom brown, you shouldn't be putting on the rack, they need to be on the tray. I use parchment paper and put the bagel right on the tray. This ensures the bottom is perfectly brown. I've been told from friends in Phoenix that I make the best bagel they ever had and I am in New Jersey now and work in Manhattan. Even in Manhattan, I was old my bagels are superb which is the ULTIMATE compliment. I do with I had a stem oven though.
Every time Babish asks "Right Brad?" I picture Brad Leone behind the camera going "I don't know Babby! We're making salty fish planks. Trust your heart." and that makes me smile.
How absolutely hilarious it is that I JUST sat down to eat my Bagels and Lox for lunch and this is the first vid recommended to watch while eating it.

babish i highly HIGHLY recommend making your own lox schmear if you ever do this again (as someone who makes lox bagels semi frequently)! lemon, dill, chives, onion and garlic powder, lox, and cream cheese all whipped together!

I said this last time. Babbish has that long slicing knife. He should, you know, use it. Long strokes using the whole blade would prevent tearing.
I had a smoked salmon craving after watching this.
Ended up going to the groccery store, buying smoked salmon, and snacking on it with crackers 😂
I've always baked my bagels on either parchment paper on on a baking stone (instead of on a rack). They don't stick and the bottom turns out reasonably well. I'm pretty happy with the results.
Also, Sawyer and Adam should have a show together. And I want to be a guest on it. Forever.
EDIT: Oh and I wouldn't put a weight on the salmon, I know recipes call for it but I've never had the texture problem where the slices come out flaky and I also don't have a weight to put on top of it. It could have something to do with the quality of the salmon but I doubt it since you sought out high quality salmon.

My sister makes homemade lox for my grandpa every year for Christmas since it's is favorite. He passed away a couple weeks ago so watching this was a bit bittersweet.
Chicken fingers and French fries would be great because a)the simplicity creates a really even playing field to let subtleties come through, and b) it’s harder to make restaurant style chicken fingers that look restaurant style at home so I’d love to see Andy’s recipe

I've made lox a few times, the recipes i followed required you to freeze the salmon for several days first. Also a nice way to add smokeyness is to use lapsang souchong tea (smoked tea).

Worked in a bagel shop on Long Island over 50 years ago... the bagels were baked on water soaked hardwood boards (2x4) and slid right off. Just so you know...

coriander seed and lemon zest did it for me, and white peppercorns and dill. made a whole salmon side for christmas, delicious. can also add beetroot for color if you want and a nice earthy flavour. delicious on potato pancakes with a little creme fraiche or honey-mustard sauce.

Always odd hearing non-Swedish people talk about Lax. I just know we use Gravad Lax on the holiday events like Christmas, Easter and Midsummer. Very interesting, now I want some lax on a bagel, never had that before. Stay safe everyone.

I wonder if you could use like a smoked salt for the cure to impart a bit of smoky flavor more safely than smoking the salmon itself

See this is all NYC dependant, and all my ideas are field trips: Miami for Cubanos, Montreal for Poutine (really ned to se banish make cheese curds), Chicago for Deep Dish, Philly for Cheese Steak, Nashville for hot chicken. Really what i am trying to do is get everyone a regional vacation.
Sourdough and naturally leavened bagels are next level. Preferment made the difference. You can tell with the open crumb and bubbles on the crust. The flavor is much better too. I actually like sourdough baguettes, 3-4 day cold ferment. With butter salmon capers red onion lemon. Open face. It's lighter and had three crisp baguette crust.
I would like to see a live cooking sesh with a professional chef side by side. To many times have cooking influencers been put in the spotlight to show they literally are trash cooks. No editing, no re-takes, just raw skill. Have you shown this before?
