This is a realistic tutorial about ec2 auto scaling because it shows use of a private AMI for the application. It would also be useful to show how to upgrade the AMI to a new version of the application which would require swapping out all of the existing instances with the new upgraded instances, perhaps requiring a small amount of downtime.
I have just 1 instance .. Can we auto change instance type on schedule time ? eg: During day time I want t3.xlarge and after evening it scheduled to t3.small

Hello sir, just to reconfirm myself, you also mentioned launch configuration contains private key info, so is it added in userdata or we have separate tab for that?
"Userdata" is used for additional settings to the instance, such as application installation. The example that he gave was Apache (httpd). Has nothing to do with "Private key".
