HELLO! I would like to tell the easier and faster version for this! (Thanks to this video too, I learned how to find it). 1. Create the shape 2. Object > Path > Outline Stroke 3. Press the Eraser (Shift+E) and just click the parts you want to delete. Hope it helps!
Personally, I would have gone back to your original way, except after using minus front to subtract the rectangle, I’d use the Direct Selection tool to select and delete the bottom two anchor points of the rectangle cutout. Then all that would remain is the stroke circle with a broken open path.
This option is not available on text apparently, tried. I have cursive text I need to cut in acrylic with a laser printer but I cannot get rid of the overlapping lines. HELP

Just make a circle, youse the pen tool, take the quick selection tool and press delete wherever you want the cut to be. 5 second process

its not remaining as a stroke. You made it shape. If you used shape builder tool , the stroke remained as a stroke after cut. Thanks.
Not correct ! For example when you make a stroke and after that you go to object menu then Expand the stroke will be changed to shape.
