Um, I think that all tequila is mezcal but not all mezcal is tequila. Tequila is from the agave that comes specifically from that region of Jalisco. Mezcal can be found in Guerrero, Oaxaca, Mexico State...pretty much wherever agave grows, and not even that since they want to change that denomination to Comil in certain regions.
Tequila will never be mezcal, the process aint the same anymore. Mezcal goes through a traditional process, slow cooked, on the ground, natural fermentation etc... it takes time. Tequila on the other hand, its been so popular that the factorys had to make up for the demand, so everything is done faster, more quantity less quality, they add color to the reposados, they compensate with sugar cane alochol, its just industrialized tequila now. Its just a matter of time i guess for mezcal to go through that. Mezcal used to be drank by the poor people, the low life, drunk hobos, now is the spirit of choice of many hipsters.

im sorry but why would you call if californian food if you still need to explain the contents and cooking style of the dish? shouldnt progressive food be ubiquitous local food just maybe added with a seasonal or modern twist and still familiar to an local?
