Yeast is not harmful for health,, in all breads buns we add yeast more that what we add for this recipe,,in western countries they eat bread almost for all three meals everyday ,,,mamma rice sapdra madhiri .. so don’t worry

Without yeast you cannot make it ferment in 30 - 2 hrs. But you can add baking soda and make appams instantly in a Dosa tawa ( reference-check last part of my wheat appam video )no waiting time needed if you add baking soda
For instant recipe we use yeast -( only if you want to make it in 2-3 hours ) - but if you let it ferment overnight - then add 1/8 tsp of baking soda or powder Jew minutes before you make appams ,, try pannitu sollunga
im a malaysian n te measuring cup shown here is not available here. can u pl specify in gms. i tried using normal cup n recipe didnt turn out wel for quantity is impt.
I haven’t tried with Eno -- but Eno will not make the batter sour,, you might get the texture but not the actual taste::: if you try with Eno please share the outcome with us
What is iddyappam flour I have raw rice available Can't we make with raw rice .please reply to make perfect appam ..we don't know malyalam or tamil but with ingredients U can make out little
Don’t worry sis,, you can also make it with raw rice- soak raw rice for 2 hrs , then strain it- let it air dry in a cotton cloth / towel for 30 min,, ( it shouldn’t be soaking wet- neither too dry)..now powder that flour and use that 2 flour for this recipe - to store the remaining flour dry roast the left overs slightly - so that there is no moisture -and store it in an air tight container for future use

Also this video has both instant appam-using yeast and the other one at the end is without yeast but it needs over night fermentation-for this no yeast recipe- please add 1/4 tsp baking soda before making appam- try it out and let me know your feedbacks Note- for instant appam let it ferment for Atleast 2 hrs- taste the batter if it has a mild sour taste -appam tastes good of it has a mild sour taste- happy cooking
1 tsp yeast is fine...use luke warm water to make the mix and if needed extend the fermentation time...it might vary based on your room temperature on hot days - 30 min is enought, for cold days you might need little longer...so check the batter if it is too frothy and has a mild sour taste, then start making appams...Happy cooking !!
if It sticks - then the tawa is not seasoned , use a nonstick one (if you don’t have a well seasoned tawa). I used nonstick and got lace like appam with ease

1 tsp yeast is enough too , might take extra 30 min ,, if you add 2 tsp , the yeast smell with be strong which I personally don’t like

I used brahmins rice flour- this is the common brand that we get in Indian groceries at California ,, use any idiyappam / kozhukattai rice flour
