I'm in NY too and yes it's so cold the doggos only want to stay outside for a few minutes before wanting back inside. Comfort food is the best on these chilly days. The good smells coming from the kitchen add to the coziness. Today I'll be making stuffed peppers and tomorrow a small boneless turkey breast. Thanks for the video stay warm!
Oh yes this is a variation on " Beef Bourguignon " french .Uses red wine, garlic, onion, carrots, bacon thyme, fingerling potatoes, beef stock .Just made it last night ..serve with mash potatoes and french baguette...heavenly!!

I usually use beef stock and sometimes add wine to it. I am sure the wine helps to tenderize the stew beef. Love your videos. I have made so many wonderful dinners.

Just made this as we await the eastern coast blizzard (I'm a little farther inland thank goodness but not much). It is absolutely delicious! And yes, the meat is so tender it's falling apart! Will have to finish it later while I wait for the homemade bread to finish baking. Another amazing Kevin recipe!
I made this today…I had one problem…I opened the wine to let it breathe….when I went to add it to the stew there seemed to be only 630ml in the bottle…I have no idea how it lost 4 oz…the stew was beautiful! I always prided my self on my red wine stew…I learned a tip or 2 watching this video…and out did myself. I appreciate all the effort you go to to teach us so many good ways for us to make the very best food.

I usually use about a cup or so, because I poured some for me to drink 😃 Also, I use a potato to thinking the sauce. I don't like to use anything else... I thought it was funny that you said you wouldn't use potatoes because it would be too much starch... well, I say the same thing about flour and corn starch, but yet I also use rice and bread.

I concocted this recipe decades ago, but I’m reminded once again that original thought, like Original Sin is something that happened a long long time ago to people we couldn’t possibly have met. That being said, if you’re going to go whole hog on something so delicious you must make the effort to seek out and clean Pearl onions. Yes, I know... but the effort will pay off for those “look at what I cooked” pictures you just know you’re going to send to everyone! Plus, you should try those itty bitty potatoes that are all the rage lately, and add a handful of frozen peas at the end. I serve mine with some tarragon parmesan cheese mustard crostini. No recipe needed!

Have you tried adding a small amount of your potato flakes to thicken- works well- we have a family member who cannot have corn - she told me about the potato flakes
