You don't have to punch the butterflies, you simply touch them. They do take a moment for this to be able to happen though, because they're in the middle of being fleshed out
It looked like there was a Toad in the Forest Maze area, through the left door (somewhere you sped through). I haven't watched the whole video yet, so maybe you went back to it later in the video or in the next segment that's been uploaded at the time of this writing. I also think I either saw that Toad (maybe I made a similar comment) in the LP of the previous version of the hack, but I'm not sure.

Dr. Goomba Stack already is a thing, as Josh explained in the video (though technically they're called Dr. Goomba Tower).
