Yeah, in Dark Souls 3, I think only Dancer, Lorian, the Nameless King (mostly him) and a few other DLC bosses have rollcatch intervals. In Elden Ring, even the Misbegotten does this.

As someone that's studied Margit's character model for anatomy practice/potential fanart, I seriously commend you for being able to animate his horns so consistently!! They are NOT that easy to untangle, much less draw repeatedly. And this is on top of your already dynamic style/staging, and excellent comic timing. It's worth noting that margit has 2 different attacks after the windup depending on how close you are. If you're distant, he'll jump towards you and swing the weapon horizontally instead of vertically like in the animation.

The first attack he can follow with another spinning swing (you can actually parry this) and the second he has no follow up to, so you can always get a hit on him, but only one or he’ll pull the dagger out (unless of course you were sensible and dodged behind him out of dagger reach).

Elden Ring boss fights be like: 7 hit uninterruptible combo, followed by a half-arena hop to prevent you from getting a hit in, followed by a 7 second long windup attack to close the distance that they'll instantly cancel into another, slightly different, 5 hit combo if you try to get a hit in, followed by a .05 second period you can actually get a hit in except just kidding that was a bait to get you in range of their grab that drains 75% of your healthbar, inflicts status, and kills your dog

The way the intro plays like a badass start to a showy conflict (smoke flick with the axe was just *chef kiss*) and then devolves into a game of delayed wack-a-mole that everyone in this comment section feels kinship with makes this my favorite fanimation for ER so far. Can never take Margit seriously because of this. He feels almost like a joke boss that has meta-knowledge about how dodge rolling works and the fact that no, we can't just walk up and shank him to make him stop his massive ridiculous feinting windups. Kind of makes me sad that the 'difficulty' aspect of this particular boss feels so sloppy and shoehorned in. Even other bosses in ER have so much better difficulty rational.
I don't think it is shoe-horned difficulty. Gameplay wise it is meant to be your first real gatekeeper/challenge that tests if you know how to dodge roll, understand other mechanics and gave acquired talismans, upgrade materials and spells/weapons summoning items. It is supposed to be hard enough fight that encourages you to explore Limgrave rather than hit your head against brick wall. Lorewise it is weary old king in cognito who hunts inexperienced tarnished like you every Friday night and Weekends. Game even awards you with an item spesifically meant to handicap this boss if you just explore the world.
