- MATHICURRY - COCONUT MILKIL
INGREDIENTS
1.Sardines (cleaned) 500-600gm
2.Coconut oil 1 tbsp
3.Coconut milk 1st (From half coconut) ½ cup
4. Coconut milk 2nd " " 1 ½ cup
5.Ginger chopped 2 inch
6.Garlic chopped 10-12 nos
7.Big onion chopped 3 tbsp
8.Green chilli slit 3-4 nos
9.Turmeric powder ¼ tsp
10.Chilli powder 1 ½ tbsp
11.Salt to taste
12.Kokum 2 nos
13.Curry leave plenty
GARNISH
14.Fenugreek powder ¼ tsp
PREPARATION
1.Mix the chilli turmeric powders and all the chopped items salt etc with the oil. Set aside 10 minute (items 2-11)
2.Boil the above with kokum adding a little water and boil 8-10 mts.
3.Adding the 2nd milk of coconut, boil, stirring, add the sardines, boil on slow fire. For 8-10 mts. Add the first extract too.
4.Garnish with curry leaves and fenugreek powder. Set aside.

ടീച്ചറെ, എനിക്ക് ഇരുപത്തഞ്ചു പോയിട്ട് പത്തു തരം മീൻ കറി പോലും അറിയില്ല. ടീച്ചർ ന്റെ മീൻ കറി കണ്ടിട്ടാണ് ഞാൻ ഉലുവ പൊടി ഇടുന്നത് തന്നെ. ഇപ്പോൾ സ്ഥിരം ഉലുവ പൊടി ഉപയോഗിക്കും. ഇതുപോലെ ഇനി ഉണ്ടാക്കാം എളുപ്പമാണല്ലോ. പിന്നെ ടീച്ചറിന്റെ പഴയ കാലത്തെ കാര്യങ്ങൾ കേൾക്കാൻ ഒരുപാട് ഇഷ്ടാണ്. ഞങ്ങൾക്ക് അതൊക്കെ അന്യമല്ലേ. അതുകൊണ്ടു ടീച്ചറിന്റെ സംസാരം നല്ല രസമാണ് കേൾക്കാൻ. ടീച്ചർ പറഞ്ഞപ്പോഴാണ് ഞാനും ഇതൊക്കെ ഓർത്തത്. ചെറിയ ഇലകളുള്ള കദളിച്ചെടിയും വലിയ ഇലകളുള്ള കദളിച്ചെടിയും ഒക്കെ പണ്ട് തോട്ടുവക്കത്ത് നിൽക്കുമായിരുന്നു. പരുപരുത്ത ഇലകളുമായിട്ട്. അതുപോലെ കാശാവ് എൻ്റെ ചെറുപ്പത്തിൽ പറമ്പിലുണ്ടായിരുന്നു. റബ്ബർ വെച്ചപ്പോഴാണ് പോയത്.നല്ല കടും നീല നിറം.
