@@karldelavigne8134 Not a bad guess. But at 0:04 she goes to the camera-left end of the counter to put something away and her voice is clear. Then she turns away, and her voice goes quiet. Then, for the rest of the video, when she sets something on the counter you can clearly hear the clunks and thumps, and when she slides something across the counter you can clearly hear the scratching. Meanwhile, her voice is muffled. The mic must be sitting on the counter over to the left side.
Put it in at Midnight mass and then take it out in the morning. How is that "12 hours in the oven?" Can anyone give a slightly clearer idea of how long it will actually take for a 25-28lb turkey? I'm close to chickening out!!! Help!!!
Would placing the chicken/turkey in a "X" shaped roasting rack before finishing in the Roasting oven given the skin a more uniform browning? As it sits there, the finish looks too uneven given all of the hard work and energy put into it thus far. I'm coming from an American perspective, so there may be differences in aesthetic goals here.

They are on all the time. Period.
It is easier to justify if it runs the hot water and eliminates the need for several radiators/heating vents.

If it's over 17 pounds, put it in the Roasting oven for an hour or so, then move to the simmering oven.
