3am in north carolina and I'm learning about buying whole cows. Caren thank you, this has convinced me even more thst this is the way we're going with buying meat. If we can find a butcher, couple farmers near us in Charlotte will only sell live steers as there is nowhere to process them right now

First time error embedded in disappointment but determined to learn for next year! Didn't get a cut sheet to the processor before harvest so I lost out on the heart, tongue, liver etc. That won't happen again! Thank you Caren for educating me on exactly how this is done. This processor seems to think we all want more ground beef than whole cuts. Grrr. Grass fed Black Angus is not meant for burgers! But I'm ready now. Thanks to you!!!! Hugs

We have an old, sad upright freezer story. . . Never again. Thanks for all the information, much appreciated. We finally found a local rancher raising pastured cattle (in a non-ranching area) and a local processor/butcher. All the information seems overwhelming, but I am determined to learn. Ive been thinking of doing a full cow. It's a not half bad price but something to save up for. A full cow will feed a single person like myself for a long time. I have worked in hotel and various other kitchen for a while so i know how i would do most cuts. Beat for me is more roasts and stew meats, less ground. I so would want as many bones as possible ao i can make stock/broth.
This video was so helpful. You also have one of those voices that would be perfect for audiobooks or storybooks for kids. No matter how stressed I’ve been today your voice calmed me right away. I do have a question what if you don’t want the beef 🥩 aged at all? Is that possible?
Hello and thank you for watching. Glad you enjoyed the video. Yes it is definitely possible to not have your beef aged at all. When we have smaller beef animals harvested they usually just chill the carcass then butcher. They probably would have to chill the. carcass first but you can ask your processor. When you are keeping the organs and fat they are removed immediately and frozen. Hope this helps and good luck.
We had almost given up on finding a freezer! We had been on a waiting list and on Friday they finally called and delivered on Monday. Just in time because our animals go to processor in two weeks! Hope you find a freezer!

Yes, I sure can . We are working on one now. We will be showing the animal on harvest day and plan to share all the data so people will be able to estimate the weights and cuts based on the animal live weight and hanging weight. In the meantime please feel free to ask us any questions you might have. We have years of data of the animals we have had processed. For instance, if you want to know how many t-bones cut 1.5 inches you will receive from an 800 pound live weight beef.
I would definitely parallel your cut sheet. I just can't see wasting a roast for trim. If I need hamburger I will buy it in a grocery store. Don't forget to ask for the Tri-tip steak roast. There's only one per animal qnd usually the butcher keeps it for himself.

Yesterday we picked up our beef order with a hanging weight of 422 lbs. I got all the roast except rump and pike's peak and had half of the round ground. We got about 100 lb. of ground beef. Hope this helps. Yes, you are fortunate to get an appointment. Our processor is booking 2022.

God was really looking out for us. We are getting the cow at cost from a family member and he found a processor that he trusts. I may book an appointment for next year at the same time just to be ahead of things. Now I just need to learn to garden. I planted green beans, strawberries, a pepper plant and a tomato plant. I’m seeing a possible pepper and the tomato’s have hope. The others may not make it. I have to use raised beds but hopefully I can figure it out.
New to your channel. For the First time, two brothers and I are getting ready to purchase a cow. I am so glad I saw your video. The person that was recommended by the slaughterhouse to purchase the cow from recommended that we get a 1400 lb cow. Is it possible to evenly divide the cow between the three of us? He also said that the cow (after slaughter) will hang approximately 20 days, is that too long?
So happy to hear you are planning on purchasing a cow to harvest. We harvest 700-1000 pound animals that are anywhere from 10 months to 15 months in age. Our cattle are grass-fed and that makes a difference. It probably is not possible to have the processor divide the meat in thirds, but you could have the beef processed in halves then take from both halves to divide it in thirds equally. Hope this makes sense. The length of aging in my opinion is determined by the age and size of the animal. We do not age over 14 days. For instance our 10 month old calves are aged only one week because the carcass is smaller and the younger the animal the more tender the meat so it is not necessary. Usually the butchers are good at giving advice after they have seen the carcass. Maybe your butcher will give an opinion after harvest during the dry aging period. Thank you for watching!

I am waiting for the processor to call me with hanging weight. They emailed me a cut sheet on yesterday. I know this is asking a lot from you, but is it possible for me to send my cut sheet to you to review because mine looks shorter than yours. Can you give recommendation on how to fill it out.

Hello Trae. You can go to American Grassfed Association.com and find ranchers in Texas. Maybe there is someone close to you. We are in the hill country and I don't really know many ranchers south of here. We have a video that may help you find beef and suggest questions to ask the rancher you are considering buying beef from. The site eatwild.com may help you find someone.

Unfortunately it seems the website is a bit outdated because the closest rancher to me, Nancy Klein from Harlingen, neither her email or her phone number works. Sometimes they only give you options if you ask. I just found out our butcher has an extended cut sheet with items such as tomahawk steaks. Also seems they are always adding things so we have to ask often. Thank you for watching!
There are 2 options for individuals selling beef. 1.They sell you a whole, half or quarter and deliver it to a custom processor with no inspection. You get your beef back for your consumption only. You cannot sell it if it has not been inspected. 2.They have the animal processed at a USDA inspected plant and get back the beef which can then be sold as individual cuts to stores, restaurants or individuals. So yes, a person may have USDA inspected beef that they are selling from their home. The packaging will have the USDA label with the plant number.
I want to support ranchers but dang it's so hard. They all are so wealthy already. And their prices are very expensive. Not to mention they are not always nice. I would understand if ranchers actually grew their cattle on Organic hay and feed. I don't understand why I should be paying $5/lb. Ranchers do nothing except water their acreage. That's why cows are the least expensive cattle/feed ratio there is. And you are still going to pay around $2000-2500 JUST FOR THE MEAT for half a cow. And then the harvest/cut/wrap fee. Jesus was right. Money is THE root of ALL evil.
I agree 1000%!!! I grew up off-grid where ranchers are allowed to free-range their cattle, talk about A-HOLES!!! You'd think they embody the American Spirit, but NO, they are entitled rich-b!tch Commies who think they can run their destructive animals over other people's HARD-EARNED land. Not nice people to deal with even in the dairy industry!!!! Small-family, permaculture or self-sustaining types are the only ones worth dealing with.

Hello Trae. You can go to American Grassfed Association.com and find ranchers in Texas. Maybe there is someone close to you. We are in the hill country and I don't really know many ranchers south of here. We have a video that may help you find beef and suggest questions to ask the rancher you are considering buying beef from. The site eatwild.com may help you find someone.

Unfortunately it seems the website is a bit outdated because the closest rancher to me, Nancy Klein from Harlingen, neither her email or her phone number works. However, since then, I have spoken with a local rancher through word of mouth and he’s answered all my questions. Thank you so much for your willingness to help 🙏🏽

Sometimes they only give you options if you ask. I just found out our butcher has an extended cut sheet with items such as tomahawk steaks. Also seems they are always adding things so we have to ask often. Thank you for watching!
There is someone selling beef from Home is thus real?
There are 2 options for individuals selling beef.
1.They sell you a whole, half or quarter and deliver it to a custom processor with no inspection. You get your beef back for your consumption only. You cannot sell it if it has not been inspected.
2.They have the animal processed at a USDA inspected plant and get back the beef which can then be sold as individual cuts to stores, restaurants or individuals.
So yes, a person may have USDA inspected beef that they are selling from their home. The packaging will have the USDA label with the plant number.
I want to support ranchers but dang it's so hard. They all are so wealthy already. And their prices are very expensive. Not to mention they are not always nice. I would understand if ranchers actually grew their cattle on Organic hay and feed. I don't understand why I should be paying $5/lb. Ranchers do nothing except water their acreage. That's why cows are the least expensive cattle/feed ratio there is. And you are still going to pay around $2000-2500 JUST FOR THE MEAT for half a cow. And then the harvest/cut/wrap fee. Jesus was right. Money is THE root of ALL evil.
I agree 1000%!!! I grew up off-grid where ranchers are allowed to free-range their cattle, talk about A-HOLES!!! You'd think they embody the American Spirit, but NO, they are entitled rich-b!tch Commies who think they can run their destructive animals over other people's HARD-EARNED land. Not nice people to deal with even in the dairy industry!!!! Small-family, permaculture or self-sustaining types are the only ones worth dealing with.
