Amanda est née à Ville Platte, dans la paroisse Évangéline, et habite à Lafayette et Bâton Rouge. Elle est enseignante et directrice des Études cadiennes françaises au Louisiana State University à Bâton Rouge. Spécialiste du parler cadien français, elle a co-écrit le dictionnaire cadien. Amanda est l'une des premières enseignantes à avoir intégrer le français et la culture dans son programme éducatif et elle fait la promotion de la francophonie louisianaise à travers des émissions radios, télévisées et des pièces de théâtre.
