Cheese can mold even when it's not even close to its expiration date. I have to scrape that mold off to get my moneys worth or... shred it, put it in the freezer, forget it (but keep the wrapper with its date) and take out what amount you need for that day. I've heard from a totally human being, not eldritch at all, that bread is a dead man walking if you even see a spec of mold. It's not noticeable on the surface yet it lies quite deep within.
For dense/hard cheeses this is usually fine, but be careful with anything soft at all, the part you can see with most mold is the fruiting body with spores, most of the mold is actually microscopic. Those microscopic tendrils can go deep into soft foods and can't be seen. Thats why once you see the fruiting bodies on bread, fruit/ vegetables, and soft cheeses, its safer to treat it as if its too late to cut off and save the rest. Better safe than sorry.

I always find it funny when people don’t understand Asian’s lack of cheese knowledge when like 95% of Asian people are lactose intolerant due to lack of exposure to animal milk. Bit difficult to raise cows, sheep, and goats in tropical mountains and jungles on a production level. Plus cheese and milk is very expensive/difficult to transport. Europe and NA have cheese because we make it. We have butt loads of flat grassy space for animal raising and cheese is added money. I live in a state in the US that raises a lot of cattle, and soy beans, that we export to Asia. A lot of your basic consumer grade beef probably comes from a farm 40mins from my house.
