Store-bought tortillas are NOT fully cooked. Finish them on your gas stove (no pan, directly over a medium flame) and they will taste 100x better. Flip every 10sec until cooked. The double-acting baking powder in them will tell you when that happens by creating additional gas bubbles.

Andrew Rea I know this is an older video, but when you say 8.5 oz of flour. I assume you mean by weight and not by volume?
He's using a regular bowl and not a measuring cup so it's safe to say he measured by weight. Not 100% sure, but it's SAFE to say.

if you do that, you should be careful. the Tortilla may be not too hot on the surface, but the bubbles are filled with hot steam that can burn you very bad.
I prefer corn tortillas to flour, but fresh made corn tortillas are also way better than store bought. That's why I love the mexican place down the road. They have the best fish tacos. Bar None. (Especially the salmon and white fish ones.) I mean it's always way better having actual Yucatan natives making Mexican food. Muy Bueno.

I actually took the time to make these - with ALL of the condiments - and I must say, they we absolutely amazing. 10/10 do recommend.
Edit: PS - DO NOT take the easy way out and use store bought tortillas. Trust.

Pristeen same
Couldn't wait so here is the recipe:
Start with - 16oz Dry Black beans in 3 cups of boiling water for 1 ½ hours
Pico de gallo
- 4 dices roman tomatoes
- 1 half of one Spanish Onion diced
- ¼ cup fresh minced cilantro
- ½ jalapeño diced
- Juice of one lime
Mix all in one bowl
Tomatillo Salsa
- 11 Tomatillo’s cut in half, toss with a little bit of Olive Oil
(wear oven glove, Tomatillo are toxic)
- Pour onto pre-heated backing sheet (flip so cut side is down)
- Place under pre-heated broiler for the time it takes to drink one beer
- Add to blender bowl along with
- ½ onion, diced
- ¼ cup cilantro, minced
- ½ jalapeño minced
- Juice of one lime
- Some salt and fresh ground pepper
- Blend to a smooth but a little chunky salsa
Home made Tortilla’s
- 8 ½ oz all purpose flour
- Teaspoon Salt
- 6 Teaspoons of Baking Powder
Pulse together before adding
- 3 Tablespoons of lard
Process until mixture resembles wet sand
- ¾ cup of 110º water, drizzle into food processor until cohesive ball is formed
- Wrap in plastic wrap and let rest in room temperature for 30 minutes
- Flour work surface will all purpose flour
- Roll out golf ball size of dough into about 8 inch
Throw into ‘ripping hot’ non-stick skillet until (about 30 seconds) until large bubbles form, the flip. Keep warm in low oven
Marinate Fish
- Place fish in large plastic bag
- Juice of one lime
- Little bit of Salt, Pepper, Olive Oil and fresh ground toasted Cumin
Refried Beans
- Sweat Onions
- 1 clove of crushed garlic
- Sauté until fragrant
- Add Black Beans from earlier
- Bring to boil and let simmer until creamy and delicious
- Mash up and season with salt and mash up
Guacamole
- 4 medium Avocados
- Score with butter knife and add to a large bowl
- ½ seeded jalapeño, diced
- ¼ Spanish Onion, diced
- Juice of ½ lime
- Cilantro
- Season with Salt, Pepper and Cumin to taste
- Mash up with fork until
Cooking the fish
- Sear in hot pan before placing into pre-heated oven until internal temperature is 135º
FINSHED
- Place fish onto tortilla with refried black beans, Pico de gallo, Guacamole, and spicy Tomatillo Salsa and share with friend(s).
I love that he doesn't shy away from recipes even if he knows he won't like it, or sometimes can't even have it. It really says slot about him truly caring about the content he makes for us.

It's a genetic mutation where the aldehydes naturally occurring in cilantro taste more pronounced to some. Aldehydes are part of what contributes to soap's bad taste, as they are present in the soap-making process. So basically it tastes weird and gross and like childhood trauma

I just got your cookbook the other day, and though I'm not a fan of fish tacos, flipping to the next page and seeing the instructions for how to make tortillas was a godsend. as a person who spends far too much money on tortillas, this is just excellent. Not only do I appreciate the recipes, but, I appreciate that they're broken into their constituent parts. This way I can mix and match various parts of your recipes with other recipes, and get much better food from much simpler, and better ingredients. I'm looking forward to having better tortillas for my recipes, and spending far less on them at the same time. As an aspiring home-chef, I appreciate all you do.
Storebought tortillas are actually very good here in Texas, if you go to the right place. Mexican markets are a godsend.

Cooking just absolutely fascinates me. If you think about it, it's basically chemistry but on a very macro level. I'd go through the recipes for stuff and it'd say something like "SLOWLY add COLD water to the mix", and I'd just dump the stuff in. It's crazy how much of a difference something as simple as that can make.

As a Mexican that’s a weird ass fish taco for a lot of reasons... the salsa verde should have two tomates for every Chili pepper and the lime will mask all of those complex flavours you created by adding olive oil and baking the tomatillos. For the black beans you should caramelise the onions to the point they’re almost charcoal (trust me it’s DELICIOUS). And most importantly, the fish... no respectable fish taco place would ever serve you any fish that isn’t deep fried.
I don't know why I watch these videos. I can't begin to have that much time to cook anything. None the less, much respect you are very entertaining.

Fun fact! The heat in hot peppers is actually carried primarily by the pith (core), not the seeds! So if you want a little less heat, your best bet would be to remove the white center before you mince

A healthy squeeze of lime (well, rangpur lime) is really nice on fish n chips too :) we have a tree in our backyard and have been using the citrus since I was a kid!

I also have fish allergies but not to all fish which I find interesting. I eat my way through the fish spectrum trying to figure you which one would not kill me, I had a great time until i encountered the puffer fish which made my face look like i'd gone 20 rounds with Mike Tyson. my arch nemesis remains the Red snapper. try ever thing, and see what works. it's not possible to be allergic to all fish.

@@SS2LP All tomatoes are nightshades. Tomatillos are not toxic unless you have a nightshade allergy. They're very commonly eaten raw.
@@heavymetal9099 I literally said tomatoes are a part of the nightshade family and they can be eaten raw because what they produce is different from the rest of the nightshade family and is less toxic. They are absolutely still toxic non the less most people can just handle the minor dose and effects without much issue, having an allergy to them just compounds an allergic reaction on top of any effects one could experience which are usually mild at best. The allergy stands out more than the actual effects.
Just because there isn't a visible reaction does not mean something isn't toxic or venomous. You could eat apple seeds and be completely fine despite containing cyanide.
@@SS2LP So your reply was just pointless then. The only nightshade that is toxic without an allergy is deadly nightshade Atropa belladona. You know what else are nightshades? All potatoes, bell peppers, all chili peppers, and eggplant. Nightshade doesn't mean anything. Tomatillos are completely non-toxic without an allergy.

I just tried this recipe, loved it. saddly, since I live in the middle of nowhere in Quebec, some of the ingredients were impossible to find, Tomatillo ( had to skip salsa verde QQ ) ,mahi mahi (replace with Turbot) and Coriander (cilentro) , I hate it so much: I'm just unable to see it in store. Also didnt really care for how he made his salsa verde. Been all over Mexico and I've never seen anyone put their tomatillos in the oven. Everyone I know boils them.
@Harold Jenkins It isn't really gate keeping, its more a.. Culture barrier? And a bit of a unfortunate use of words. The food most Americans refer to as Mexican food isn't much of anything like the food in most of Mexico. Americans' 'Mexican' food would be generally defined as Tex-Mex or Cal-Mex, depending on the dish. The food is fully authentic, just not authentically from southern Mexico. And a lot of the characteristics of Tex-Mex and Cal-Mex become increasingly common south of the border as you keep pressing north. The cuisines are a product of their locations. In the North they had wheat instead of corn and had almost exclusively beef. Further south you go, the more common corn becomes and the more variety you start finding in livestock, allowing for more diversity in the protein choices.
