Very true! Many people don’t do it! And it does make a very big difference in taste and also it’s not so healthy when the mustard seeds are not put after the oil nicely heating up.

You should actually heat the mustard oil till smoking point & then allow it to cool down & then add it to the onion pickle. Mustard oil goes really well in pickles.
