    It is wonderful that the environmental, sustainability stream of our food system is getting talked about along with the nutrition. Thank you, Cory Davis, for being an articulate and educated advocate for plant-based agriculture as opposed to animal-focused.

    Masculinity is very much about health, and I can't fully appreciate a man that has an unhealthy meat eating habit. Also it's about having the strength to protect others, and that comes with health and compassion.
    All these digestive and immunity problems that comes from eating foods with inadequate fiber, that is a sign of weakness to me. It takes a strong gut to eat healthy plant foods, and those foods will in turn keep you strong.

    I have Hashimoto's Disease, and am told not to eat Soy (also included in Tofu.) What protein can be substituted for soy?

    I have been on a vegan diet since 88; I have never counted calories or protein intake.

    Interesting podcast, but I've heard Dr. Esselstyn urge moderation in eating tofu due to its saturated fat content. Also, the recommended nuts and nut butters are likewise, high in fat. In addition, I've read that calcium supplementation, including that included in foods, like tofu or soy milk is not good for heart health. The window of heart healthy, brain healthy, plant healthy foods that I can eat just seems to get narrower and narrower. Discouraging.

    I don't see why animal agriculture in developing countries should be able to compete in order to lift them out of poverty. That would just create more animal agriculture there instead of focusing on growing healthy plant foods and subsidizing that. Developing countries need plant food agriculture subsidized just as we do here.

    Great interview. Both Vesanto and Cory were interesting to hear from. Is it just me, or do they both sound like Cory’s mom, Brenda?
    Vesanto sounded just like her and Cory has the same speech patterns as Brenda. That’s not a criticism at all. Just my observation.

    I make my own nut spread by mixing roasted peanuts with almonds, hazelnuts, walnuts and chia seeds in the food processor until smooth. The peanuts also have some salt, but since none of the other ingredients do, the saltiness becomes just right in the end.
    In my whole grain bread I use organic whole wheat or spelt flour, whole rye flour, chia seeds, and spices like turmeric, black pepper, spirulina, cumin, rosemary, cardamum, coriander, salt and sunflower seeds on top. So that's half of the recommended 30 different plants per week in just one meal, lol! Everything that's hard to otherwise incorporate, just make a healthy, tasty bread and put it in there.
    The nut spread on that bread with some sliced banana is healthy heaven to me, and I have it every morning. Also trying to incorporate more protein foods in my diet as I'm getting older.

      @@jgrysiak6566 Not me, I'm 160cm (5'3"), weigh 46,5 kg (102 pounds). I'm 65 years old and I never allowed myself to weigh more than 50kg. I know what to eat, and eat when I'm hungry, never stuff myself. Almost all whole foods with fiber.
