- Hey family!! In today's video it's Monday and we're getting back to the weekly routine after a long weekend! I make some PB&Js for the freezer and we make Butternut Squash Soup and Tomato Soup for supper!
Butternut Squash Soup Recipe:

This soup is really good, but it does have a bit of a sweet taste from the squash. I didn't like it too much because of that, but Titus and some of the kids loved it! The rest of us stuck with tomato soup! LOL! 😂
Ingredients
1 tablespoon olive oil
1 large onion, chopped
3 garlic cloves, minced
1 medium butternut squash (3 pounds), peeled and cubed
4 cups vegetable broth
3/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup heavy whipping cream
Directions
In a large saucepan, heat oil over medium heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer.
Stir in squash, broth, salt and pepper; bring to a boil. Reduce heat; simmer, covered, 10-15 minutes or until squash is tender. Puree soup using an immersion blender. Or cool slightly and puree soup in batches in a blender; return to pan. Add cream; cook and stir until heated through.

What a blessing it is to be able to go to church, cherish that! Here in Canada our churches have been closed since beginning of December and no idea when they will open who knows. I would give anything to go Sunday to church. One day, the Lord will work out this situation

You can bake butternut squash in the oven and then scoop it out and top with butter cinnamon amd brown sugar if you need it sweeter:)

Butternut squash soup is amazing. You can buy butternut squash frozen, cubed. I roast it in oil, salt and pepper on a sheet pan. So good.

🤗🤗🤗. My heart felt like it was ready to explode watching the tender moments of Manley. That robot sure got him going and he was loving on that sandwich. He imitates you Falon so perfectly and seems to love life with his big eyes and beautiful smile taking in everything around him. Love that soup and also make pies with it too. I do have one of those power sticks so can blend it up while in the pot. Makes life easier and less mess if ya remember to keep it deep in the pot. I laughed so hard first time I used it cuz splattered everywhere and on my hubby. Going have to try shredding cheese for those sandwiches. Melt better I think. We even had a few flakes of snow in our valley but mountains still covered even with rain. Kids looking for bait for fishing? We had a worm farm using boxes and they all grew so fat. Good project for kids as they feed some scraps from kitchen. Loved hearing Titus sing and have watched videos on your other channels. Can’t get enough of hearing your music what with all the work you put into it. Beautiful sweet video today and lovely music you’ve chosen. Love seeing Titus do his job though know it isn’t easy. What a beautiful pot of soup from scratch you made! If you want to make it less sweet and more savory, add a can of fire roasted tomatoes after you purée the soup and omit the heavy cream. Sometimes we also add frozen corn and a can of white beans at the end.

Hi everyone...Fyi its best to slice the squash length wise and drizzle a little olive oil on top and roast in the oven until tender... Puree the squash add seasonings and heavy cream and voila 😋 delicious soup and you can freeze left overs...yummo🙏😁😷
I use a spoon for peanut butter or icing or lots of things,grape jelly for me if I eat one lol

I had plain old grilled cheese and tomato last night and this looks sooooo much better than what I have! I've started to like a butternut squash soup just from Campbells, but that looked so good homemade, will have to try it sometime!

We use our left over crust for french toast casserole
I use a spoon too, it’s so much easier and faster because you don’t have to keep dipping into the jar to get more. But with a spoon you just scoop it all out at once. Take care Moss family.
