I've been talking about that too. Current guesses are that it creates a cart hash every time someone checks out at the registers. Then as people leave it scans all the items and compares them to what should be leaving the store. So if someone checks out with a case of water, paper towels, and plates. It expects to see that soon and not one of that combo with a 55in TV. I don't think anything really ties to a person just anything abnormal from what was checked out and what's walking out of the store.
